4 (8-inch) flour tortillas
1/2 cup shredded jack cheese
1 cup bean chili (leftover from Barbeque Bean Chili Dogs, recipe follows)
1/4 cup sour cream or salsa for serving
1 cup barbeque sauce
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
2 tablespoons chili seasoning
1 tablespoon packed brown sugar
1 tablespoon yellow mustard
4 all-beef hot dogs
4 hot dog buns
1/2 medium onion, chopped, for serving

Steps:

  • Heat a large skillet over medium-high heat.
  • Place 1 tortilla onto a clean work surface. Sprinkle with 2 tablespoons of the cheese. Top with 1/2 cup of the bean chili and sprinkle with 2 more tablespoons of the cheese. Put another flour tortilla on top and carefully place in the skillet. Cook for 3 minutes until tortilla is slightly browned and cheese starts to melt. Flip and cook for another 3 minutes on the other side. Repeat with remaining ingredients. Transfer quesadillas to a cutting board. Cut into wedges and serve with sour cream or salsa.
  • In a large saucepan over low heat stir together the barbeque sauce, beans, chili seasoning, brown sugar, and mustard. Bring to a boil and reduce heat to a simmer and cook for 10 to 12 minutes, stirring occasionally.
  • Meanwhile, set up grill or indoor grill pan for direct cooking over medium heat. When ready to start cooking oil the grate. Place hot dogs on the hot, oiled grill. Besides the awesomeness of pairing quesadillas and hot dogs, what I love about this recipe is that you can bake or grill the quesadillas and dogs at the same time instead of cooking the quesadillas one by one on the stovetop. I recommend you put the classic taco toppings out and let everyone build their own dog. Simple and delicious!

4 hot dogs
Eight 6-inch corn or flour tortillas
1 1/3 cups shredded cheese (such as Mexican cheese blend, Cheddar or other melting cheese)
1/2 cup sour cream
Zest of 1 lime
1 tablespoon lime juice

1/2 cup pico de gallo

1/2 cup four-cheese Mexican blend cheese, shredded
3 hot dogs, thinly sliced diagonally
1 tablespoon fresh chives, chopped
3/4 teaspoon chili powder
1/2 teaspoon ground cumin
1 tablespoon vegetable oil
salsa (optional)
