This is the easiest and yummiest bibingka! Moist, tender, slightly gooey, and buttery rice cake. Why wait for Christmas when you can make these anytime of the year?

Number Of Ingredients 15

1/4 cup unsalted butter
3/4 cup + 2 tbsp white sugar
3 large eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
1/3 cup evaporated milk
1 cup coconut milk (canned, see note 1)
1 1/2 cup glutinous rice flour (see note 2)
1/2 cup rice flour
2 1/2 teaspoon baking powder (see note 3)
grilled banana leaves (for lining)
processed cheese (sliced into strips, divided-see note 4)
grated coconut or coconut flakes (unsweetened)
salted duck egg
coconut palm sugar

Steps:

  • Pre-heat the oven to 190c/375f. Grease large muffin cups with melted butter or line with grilled banana leaves. Place in an oven-proof tray.
  • In a small pot, melt butter slowly over low heat until it turns clear and brown. Watch carefully to prevent burning. Remove from heat and pour onto a heat-proof bowl. Residual. Let it cool completely.
  • In a large bowl, whisk brown butter and sugar. Add eggs, salt, vanilla, evaporated milk, and coconut milk. Whisk until sugar has completely dissolved.
  • Sift the rice flour, glutinous rice flour, and baking powder into a strainer over the liquid ingredients. Stir until well combined and lump-free.
  • Immediately fill the muffin cups with the bibingka batter. If the batter sits on the counter for a period of time, make sure to stir it well before pouring it over the muffin cups.
  • Top with a slice of cheese and sliced salted egg on top. Bake for 12 to 15 minutes in the top rack of the oven until the top is brown. Start checking at 10 minutes. Move the rice cakes to the middle rack and bake for another 10 to 12 minutes until the toothpick inserted comes out clean (see notes for oven types).
  • Let it cool completely. Sprinkle with sugar or grated coconut on top. Serve and enjoy!

6 pieces banana leaves, round shape; about 9 inches in diameter
1/2 cup butter
1 1/2 cup coconut milk
3 eggs
1/2 cup sticky rice flour
2 cups rice flour
1 piece salted egg, cut into wedges
1 cup sugar
For Bibingka Toppings
1 tablespoon butter
1 tablespoon cheese, cheddar cheese or Edam cheese
1 tablespoon grated coconut
1 tablespoon sugar

Steps:

  • Preheat oven to 375° F. While preheating the oven, brush butter onto the banana leaves. Line the pans with banana leaves. Beat the eggs. Combine the eggs with butter and coconut milk and mix everything thoroughly. Put rice flour, sticky rice flour, baking powder, and sugar together in bowl and again mix thoroughly. Combine egg and rice mixtures. Pour mixtures equally into the pans. Top the mixtures with salted eggs. Bake for 25 minutes. When the rice cakes are already baked, brush butter onto them. Place the rice cakes in a broiler until they turn slightly brown at the top. This may take about two minutes. When done, add toppings to the rice cakes.

4 cups grated fresh cassava
3 cups coconut milk
3 tablespoons melted butter
3 eggs
1 ½ cups white sugar

1 teaspoon lemon zest
¼ cup shredded mozzarella cheese
2 cups coconut milk
1 (14 ounce) can sweetened condensed milk
2 tablespoons all-purpose flour
½ cup shredded mozzarella cheese
2 egg yolks, beaten

Steps:

  • NOTE: Cassava, also known as Manioc, tapioca or yucca, can be found in Filipino or Latin American food stores. Usually sold frozen and grated. Mix together the cassava with the coconut milk, melted butter and eggs. Stir in the white sugar, salt, vanilla, cheese and lemon rind.
  • Pour batter into a 9x5 inch loaf pan and bake at 350 degrees F (175 C) for 30-35 minutes or until done.
  • To Make Topping: Put 2 cups coconut milk, condensed milk, flour, and some grated cheese in a saucepan and boil, stirring constantly. When thick, add the slightly beaten egg yolks. Cook for two minutes. Spread on top of the cooked cassava and bake at 400 degrees F (200 degrees C) for ten minutes or until golden brown.

A very coconutty and chewy rice flour dessert. Traditionally, this is baked in banana leaves, but my family prefers the crispy edges, which is why I use a sheet pan. I have been testing out several types of chewy desserts using rice flour, and this seems to be the favorite.

1 (13.5 ounce) can coconut milk
1 (14 ounce) can sweetened condensed milk
1 stick butter, melted
4 eggs
2 (12 ounce) jars macapuno strings in heavy syrup
2 ½ cups sweet rice flour (mochiko)
1 cup packed brown sugar
1 tablespoon vanilla extract

Steps:

1 cup 1% low-fat milk
2 eggs, slightly beaten
1/2 cup sugar
1 teaspoon vanilla extract

  • Lightly grease a 8x13 pan, set aside.
