Yield 4

Number Of Ingredients 13

4 cups water
2 cups uncooked white rice
1 tablespoon vegetable oil
1 pound ground pork
1 bunch green onions, thinly sliced
½ teaspoon minced garlic
1 (14 ounce) package firm tofu, drained and cubed
2 carrots, shredded
3 tablespoons hoisin sauce
2 tablespoons soy sauce
1 teaspoon sesame oil
¼ teaspoon hot chile paste
1 head iceberg lettuce leaves, separated

Steps:

  • In a saucepan combine the water and rice. Bring to a boil, cover, and reduce heat to a simmer. Simmer for 20 minutes, until water is absorbed. Set aside and keep warm.
  • Heat oil in a wok over medium-high heat. Cook the pork, green onions, and garlic for 5 to 7 minutes, or until lightly brown. Add the tofu, carrot, Hoisin, and soy sauce, stirring frequently until heated through. Remove from heat, and stir in the sesame oil and chile paste.
  • To serve: spoon a small amount of rice into each lettuce leaf, top with the stir-fry mixture, and drizzle with additional soy sauce or hoisin, if desired. Wrap the lettuce leaf to enclose the filling.

QUICK ASIAN LETTUCE CHICKEN WRAPS

Just came up with this while trying to find a way to make chicken wraps that were flavorful enough to add some variety to the Atkins diet.

Categories     One Dish Meal

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

2 large chicken breasts
1/2 white onion
6 garlic cloves
1 -2 teaspoon Chinese five spice powder
3 -4 tablespoons hoisin sauce
1 -2 tablespoon soy sauce
1 -2 teaspoon black pepper
2 tablespoons butter
1 large leaves iceberg lettuce

Steps:

  • Cut chicken breasts into thin strips. Add butter to skillet and melt over medium to high heat. Add onion and garlic and cook 1 minute to get the flavors flowing into the butter. Add chicken, hoisin sauce and cook until chicken is white on the outside but still pink on the inside (approximately 5 minutes). Add the chinese five spice, black pepper and soy sauce and cook another 5 minutes on medium to high heat, reduce temperature and simmer covered 5-10 minutes so the chicken becomes tender.
  • Fold into lettuce wraps!
  • This is very filling, low carb and low calorie. Enjoy!

Tips:

  • Choose the right lettuce: Boston lettuce, butterhead lettuce, and romaine lettuce are all good choices for lettuce wraps. They should be sturdy enough to hold the filling without wilting.
  • Prep the lettuce leaves properly: Wash and dry the lettuce leaves thoroughly. Remove the tough center ribs, if desired.
  • Use a variety of fillings: The possibilities are endless when it comes to fillings for lettuce wraps. Some popular options include ground beef, chicken, shrimp, tofu, and vegetables.
  • Don't overload the lettuce wraps: Too much filling will make the lettuce wraps difficult to eat. Aim for about 2 tablespoons of filling per lettuce leaf.
  • Drizzle with sauce: A flavorful sauce can really take lettuce wraps to the next level. Some popular options include hoisin sauce, peanut sauce, and sweet and sour sauce.
  • Serve immediately: Lettuce wraps are best served immediately after they are made. The lettuce leaves will start to wilt if they sit for too long.

Conclusion:

Lettuce wraps are a delicious, healthy, and versatile dish that can be enjoyed for lunch, dinner, or as an appetizer. They are easy to make and can be customized to suit your own taste preferences. With a little planning, you can create a variety of lettuce wraps that will please everyone at your table. So next time you're looking for a quick and easy meal, give lettuce wraps a try. You won't be disappointed!
