Tips:

  • Choose the right rhubarb: For the best flavor and texture, use fresh, firm rhubarb stalks that are deep red in color. Avoid stalks that are wilted or have brown spots.
  • Prepare the rhubarb properly: Before using, wash the rhubarb stalks and trim off the ends. Then, cut the stalks into small pieces.
  • Don't overcook the rhubarb: Rhubarb cooks quickly, so be careful not to overcook it. Overcooked rhubarb will become mushy and lose its flavor.
  • Use a light touch when mixing the batter: Overmixing the batter will make the coffee cake tough. Mix just until the ingredients are combined.
  • Bake the coffee cake until a toothpick inserted into the center comes out clean: This will ensure that the coffee cake is cooked through.

Conclusion:

Rhubarb coffee cake is a delicious and easy-to-make treat that is perfect for breakfast or brunch. With its sweet and tangy flavor, this cake is sure to be a hit with everyone who tries it. So next time you have some fresh rhubarb on hand, be sure to give this recipe a try!
