1 tbsp fish sauce ((sub with vegetarian fish sauce if you want it vegetarian))
7 oz (200ml) coconut milk (from a tin)
1 tbsp light brown sugar

  • If you don't have time to roast the peanuts, you can use store-bought roasted peanuts. Just be sure to toast them in a dry skillet over medium heat for a few minutes to bring out their flavor.
  • You can adjust the spiciness of the sauce by adding more or less chili powder. If you want a really spicy sauce, you can also add a finely chopped chili pepper.
  • If you don't have tamarind paste, you can use lime juice or white vinegar as a souring agent. However, tamarind paste will give the sauce a more authentic flavor.
  • Be sure to taste the sauce as you're making it and adjust the seasonings to your liking.
  • This sauce is great for dipping satay skewers, but it can also be used as a marinade or sauce for other dishes, such as chicken, pork, or tofu.
