1/4 cup tomato sauce
2 tablespoons minced fresh basil or 2 teaspoons dried basil
2 tablespoons red wine vinegar
3 garlic cloves, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound uncooked medium shrimp, peeled and deveined
1-1/2 cups pineapple chunks
1 medium onion, cut into wedges

Steps:

  • In a large resealable plastic bag, combine the first seven ingredients. Add the shrimp; seal bag and turn to coat. Refrigerate for up to 2 hours., Drain and discard marinade. 1 cup orange marmalade
1/4 cup soy sauce
1-1/2 pounds uncooked medium shrimp, peeled and deveined
1 pound medium fresh mushrooms
2 cups cubed fresh pineapple

  • In a small microwave-safe bowl, mix marmalade and soy sauce. Set aside 1/4 cup for basting., On 10 metal or soaked wooden skewers, alternately thread the shrimp, mushrooms and pineapple., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
