1 pound ground beef
1 envelope (1-1/4 ounces) taco seasoning
1 can (14-1/2 ounces) stewed tomatoes
1 can (15 ounces) kidney beans, rinsed and drained
1 cup water
Shredded cheddar cheese
Sliced green onions, sour cream and corn chips or tortilla chips, optional

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the taco seasoning, tomatoes, beans and water; bring to a boil. Reduce heat, cook until heated through. , Ladle into individual bowls; top with cheese. If desired, also top with onions, corn chips and sour cream.

1 large onion, chopped
1 (1 1/4 ounce) package taco seasoning mix
2 cups whole kernel corn
1 (15 ounce) can vegetable broth
1 (15 ounce) can black beans
1 (15 ounce) can white beans
1 (16 ounce) can fat-free refried beans
1 (10 ounce) can Rotel Tomatoes
1 (15 ounce) can diced tomatoes

Steps:

  • Saute onions in a large stock pot.
