QUICK AND EASY VEGAN TOMATO SOUP

Quick and Easy Vegan Tomato Soup image

In my opinion, this tastes just like Campbell's, but without the dairy, gluten, and other nonsense. For the non-dairy milk, I used So Delicious brand coconut milk. This is a new product which you can find next to the refrigerated soy milk at your health-food store. It doesn't have a strong coconut flavor, but it does have a lot of good fat, which means it works really well in a recipe like this. You can also try soy milk, nut milk, etc.

QUICK AND SPICY TOMATO SOUP

QUICK AND SPICY TOMATO SOUP image

Categories     Soup/Stew     Bean     Tomato     Sauté     Quick & Easy     Dinner

Yield 4 people

Number Of Ingredients 11

3 tablespoons olive oil
2 carrots, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 26 oz. jar marinara sauce
4 cups chicken broth
1 15 oz. can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup small pasta
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

Tips:

  • Select ripe, flavorful tomatoes: The quality of your tomatoes will significantly impact the taste of your soup. Choose ripe, juicy, and flavorful tomatoes for the best results.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and sweetness. Toss them with olive oil, salt, and pepper, then roast in a hot oven until caramelized and slightly charred.
  • Use a variety of herbs and spices: Don't be afraid to experiment with different herbs and spices to create a unique flavor profile for your soup. Some popular options include basil, oregano, thyme, rosemary, garlic, and chili flakes.
  • Add a touch of sweetness: A bit of sweetness can help balance out the acidity of the tomatoes. You can add a spoonful of honey, sugar, or even a grated carrot to your soup.
  • Don't overcook your soup: Tomato soup can quickly become overcooked, resulting in a bland and watery soup. Simmer your soup gently for just long enough to heat it through and blend the flavors.

Conclusion:

With its vibrant color, tangy flavor, and versatility, tomato soup is a classic comfort food that can be enjoyed all year round. Whether you prefer a smooth and creamy soup or a chunky and rustic one, there's a recipe out there to suit your taste. Experiment with different ingredients and techniques to create your own signature tomato soup recipe. And don't forget to enjoy a warm bowl of soup with a side of crusty bread or a grilled cheese sandwich for a truly satisfying meal.
