BEEF AND QUINOA STUFFED BELL PEPPERS

Beef and Quinoa Stuffed Bell Peppers image

I made this recipe for a challenge in the Culinary Quest. Since I had quinoa to use up and wasn't sure what I was going to use it for, I decided to pretend it was rice. I used two other recipes to make this. The first being Recipe #16399 by dibs. Then prepared it like Debbwl suggested... Recipe #415970. I hope you enjoy this dish. *Note: Prep and Cook times do not include toasting of quinoa or resting times.

GREEK-STYLE STUFFED BELL PEPPERS WITH QUINOA

Greek-Style Stuffed Bell Peppers With Quinoa image

This a Greek take on the classic beef stuffed pepper. Lemon, cinnamon, fennel and oregano spice up traditional ground beef and onions, while healthy quinoa adds extra fiber. There seem to be a lot of steps, but this one goes together in about 20 minutes. It works great if you have pre-browned ground beef in your freezer.

VEGAN QUINOA-STUFFED PEPPERS

Vegan Quinoa-Stuffed Peppers image

A vegan and gluten-free spin on stuffed peppers. I don't enjoy the Mexican flavors usually associated with quinoa, so this recipe closely resembles the flavor of a standard beef-and-rice stuffed pepper, minus the fat but with complete protein and lots of veggies! Sometimes there may be enough stuffing left over for a fifth pepper, but honestly, I like the stuffing plain, too!

MEXICAN QUINOA STUFFED BELL PEPPERS

Mexican Quinoa Stuffed Bell Peppers image

Make and share this Mexican Quinoa Stuffed Bell Peppers recipe from Food.com.

Provided by Lakerdog2

Categories     Lunch/Snacks

Time 50m

Yield 4 peppers, 4 serving(s)

Number Of Ingredients 13

4 green bell peppers, tops cut off
1 cup uncooked quinoa
1/4-1/2 red onion, diced
1 -2 minced garlic clove, depending on how much you like
3 tablespoons diced green peppers (chop up the tops of the bell peppers when you cut them off)
1 (14 1/2 ounce) can black beans, drained
1 (14 1/2 ounce) can diced petite tomatoes, drained well
1/8 cup salsa
3/4 cup corn
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon cumin
1/8 cup fresh cilantro, i use alot (use more or less depending on how much you like it.)

Steps:

  • Cook bell peppers in boiling water for 3-4 minutes to soften a little. (I did this because I was short on time and wanted to decrease baking time. You can of course, skip this and just stuff the raw peppers, then bake.).
  • Cook Quinoa in chicken broth, NOT water!
  • In a saucepan, sautee onions, garlic and chopped bell pepper tops.
  • Add rest of ingredients and cook until warmed through.
  • Fluff quinoa when it's done and add to saucepan with everything else.
  • Stuff peppers with the mix.
  • Bake at 350 for 15-20 minutes depending on the size of your peppers and how much they cooked when they were pre-boiled. They should take no more than 15 minutes for smaller peppers. If you stuffed the peppers raw, they will need to bake for 30-40 minutes. Put a few tablespoons of water in the bottom of the dish too.).
  • NOTE: I wanted to add olives, but had none, so those would be good too. Some cheddar cheese would be great too.

Tips:

  • Choose the right bell peppers: Look for bell peppers that are firm, brightly colored, and have smooth skin. Avoid peppers that are bruised or have soft spots.
  • Prepare the bell peppers properly: Cut the bell peppers in half lengthwise and remove the seeds and ribs. Rinse the peppers thoroughly and pat them dry.
  • Cook the quinoa perfectly: Quinoa is a versatile grain that can be cooked in a variety of ways. For this recipe, you will need to cook the quinoa according to the package directions.
  • Use fresh, flavorful ingredients: The fresher the ingredients, the better the quinoa stuffed bell peppers will taste. Use ripe tomatoes, sweet corn, and crisp bell peppers.
  • Don't overstuff the bell peppers: The quinoa mixture should fill the bell peppers without being too tightly packed. This will help the quinoa cook evenly.
  • Bake the bell peppers until they are tender: The bell peppers should be baked until they are tender and the quinoa is cooked through. This usually takes about 30 minutes.

Conclusion:

Quinoa stuffed bell peppers are a delicious and healthy meal that can be enjoyed for lunch or dinner. They are packed with protein, fiber, and vitamins, and they are also low in calories. This recipe is a great way to use up leftover quinoa, and it is also a great way to get your kids to eat more vegetables.
