2 tablespoons (2 turns around the pan) extra-virgin olive oil
2 medium carrots, peeled and chopped
1 parsnip, peeled and chopped
1 medium onion, chopped
2 ribs celery, chopped
2 bay leaves, fresh or dried
Salt and pepper
6 cups good quality chicken stock
1 pound (the average weight of 1 package) chicken breast tenders, diced
1/2 pound wide egg noodles
A handful fresh parsley, chopped
A handful fresh dill, chopped

Steps:

  • Place a large pot over moderate heat and add extra-virgin olive oil. Work close to the stove and add vegetables to the pot as you chop, in the order they are listed.
  • Add bay leaves and season vegetables with salt and pepper, to taste. Add stock to the pot and raise flame to bring liquid to a boil. Add diced chicken tenderloins, return soup to a boil, and reduce heat back to moderate. Cook chicken 2 minutes and add noodles. Cook soup an additional 6 minutes or until noodles are tender and remove soup from the heat.
  • Stir in parsley and dill, remove bay leaves and serve. This is a thick soup. Add up to 2 cups of water if you like chicken soup with lots of broth.

1 tablespoon butter
1 1/2 pounds ground chicken
1/2 pound white mushrooms, sliced
2 cloves garlic, chopped
1 medium onion, chopped
1 red bell pepper, seeded and chopped
2 teaspoons smoked paprika, 2/3 palm full
Salt and pepper
1 cup chicken stock
1 cup tomato sauce
1/2 cup sour cream or reduced fat sour cream
Handful chopped flat-leaf parsley
1 package fresh gnocchi, in refrigerated section of market, 12 to 14 ounces
2 tablespoons chives

Steps:

  • Heat the extra-virgin olive oil and butter in a large, deep skillet over medium to medium-high heat. Add the ground chicken. Brown the meat 3 to 4 minutes, push it off to the sides of the pan then add mushrooms, garlic, onions and peppers to the center of the pan. Cook the vegetables 5 minutes then mix them together with chicken and season with smoked paprika, salt and pepper. Stir in stock and tomato sauce and bring to a bubble. Reduce heat to a simmer and cook 5 minutes then stir in sour cream and turn off heat. Add parsley. Adjust seasonings, to your taste.
  • While chicken goulash cooks, bring a medium pot of water to a boil. Salt boiling water and cook gnocchi until they puff up like pillows and float, 5 minutes or to package suggestions. Drain gnocchi and add to chicken just after you stir in the sour cream.
  • Ladle goulash with gnocchi into shallow bowls and garnish with chives.

5 tablespoons extra-virgin olive oil, divided
2 pounds chicken tenderloins, diced into bite-sized pieces
Salt and freshly ground black pepper
4 tablespoons butter, divided
12 large white mushrooms, sliced
1 cup shredded carrots, store bought
4 ribs celery from the heart, very thinly sliced
1 to 2 fresh bay leaves
3 tablespoons all-purpose flour
3 cups chicken stock, divided
1 cup basil leaves
1 clove garlic
A generous handful parsley leaves
A handful pine nuts, lightly toasted
A couple handfuls grated Parmigiano-Reggiano
1 lemon , zested
2 (10 to 12-ounce) packages, fresh gnocchi

Steps:

  • Place a large pot of water on to boil for gnocchi.
  • Heat a pot with 1 tablespoon extra-virgin olive oil, a turn of the pan, over medium-high heat. Add chicken, season with salt and pepper, and lightly brown. Remove to a plate and add another tablespoon of olive oil and 2 tablespoons butter and heat. Add mushrooms, carrots, celery, and bay leaf, season with salt and pepper. Soften 5 minutes, sprinkle in flour and cook 2 minutes. Whisk in 2 1/2 cups stock, slide the chicken back into the pot and simmer to allow sauce to thicken.
  • Place the remaining 1/2 cup stock in food processor with basil, parsley, garlic, pine nuts and cheese, salt and pepper. Turn processor on and pour in the remaining few tablespoons oil.
  • Melt 2 tablespoons butter in a skillet over medium heat with the zest of 1 lemon.
  • Salt cooking water and drop gnocchi in the water, cook until the gnocchi floats, drain and add to the lemon butter and season with salt and pepper, to taste. Toss the gnocchi 2 to 3 minutes in lemon butter until light golden at edges.
  • Turn heat off chicken and stir in pesto sauce. Serve the chicken in shallow bowls and top with lemon butter dumplings.

1 1/2 pounds ground chicken
1 tablespoon grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 teaspoon, 1/3 palm full, fennel seeds
1/4 cup tender sun-dried tomatoes (available in pouches or tubs in produce section)
1 cup, 20 leaves fresh basil, divided
2 tablespoons extra-virgin olive oil, plus some to drizzle
4 cloves garlic, minced
1 medium onion, finely chopped
1/2 teaspoon crushed red pepper flakes, eyeball it in your palm
1 (28-ounce) can crushed tomatoes
1 (8-ounce) can tomato sauce
Pepper
1 pound gnocchi, potato dumplings, from refrigerated or frozen foods section of market
Grated Parmigiano-Reggiano or Romano, 1/2 cup - a couple of handfuls, plus some to pass at table
Crusty bread, to pass at table
Peppery Salad, recipe follows
2 teaspoons steak seasoning
2 tablespoons red wine vinegar, eyeball it
1/4 cup extra-virgin olive oil, eyeball it
6 large radishes, thinly sliced
1 green Italian cubanelle pepper, seeded and very thinly sliced
4 scallions, chopped on an angle
1 cup chopped pickled green beans, available on condiment aisle, or hot pickled Italian vegetable salad, Giardiniera, drained well
2 bunches, 6 cups, arugula, cleaned and trimmed, coarsely chopped
Handful flat-leaf parsley, coarsely chopped
Salt

Steps:

  • Bring a pot of water to a boil for gnocchi. Salt boiling water but wait a while to drop in gnocchi.
  • Preheat oven to 400 degrees F.
  • Place chicken in a medium bowl with grill seasoning and fennel seeds. Pile sun-dried tomatoes on top of each other in small stacks then slice into thin strips. Coarsely chop the thin strips and add to bowl. Stack the basil leaves together then roll them up into a log. Shred the basil by thinly slicing the log. Add the half the basil to the bowl. Drizzle extra-virgin olive oil over the bowl. Mix chicken together, roll into mini balls, 1 1/2 inches across, and arrange on a nonstick cookie sheet. Bake at 400 degrees F for 10 to12 minutes or until firm and lightly golden.
  • Heat a large skillet over medium heat. To the hot skillet, add extra-virgin olive oil, 2 turns of the pan then the garlic, onions and crushed red pepper flakes. Cook until tender, about 5 to 6 minutes. Add crushed tomatoes, tomato sauce and season sauce with salt and pepper.
  • Drop gnocchi in boiling water and cook 5 minutes or to package directions.
  • Stir basil into sauce to wilt it. Drain gnocchi and arrange on a platter. Remove balls from oven and add to gnocchi, equally distributing them. Sprinkle cheese over meatballs and hot dumplings then top with sauce by carefully ladling it all over and around the platter. Gently toss to combine then serve with crusty bread and Peppery Salad.
  • Place the steak seasoning and vinegar in the bottom of a small bowl then whisk in extra-virgin olive oil and let dressing stand 10 to 15 minutes.
  • Add the radishes, peppers, pickled vegetables, arugula and parsley to a salad bowl. When you're ready to serve the salad, dress it, toss and season it with salt, if necessary, to taste.

MONTALCINO CHICKEN WITH FIGS AND BUTTERED GNOCCHI WITH PANCETTA AND NUTMEG

Montalcino is the city I married in. I will make this dish for John every September 24, for our wedding anniversary. The way to anyone's heart, forever and ever, is through their stomach! THIS is NOT your average chicken dinner!

1/4 cup extra-virgin olive oil, 4 turns of the pan
1/3 pound thick-cut (1/4-inch) pancetta, cut into sticks
2 pounds boneless, skinless chicken, breasts and thighs combined, cut into large chunks
Salt and pepper
Flour, for dredging
1 large onion, thinly sliced
4 cloves garlic, crushed
14-16 dried figs, halved (look for plump, tender dried fig varieties in bulk section of market.)
1/3 bottle dry red wine, eyeball it (recommended: Rosso di Montalcino)
1 to 1 1/2 cups chicken stock
1/4 cup, a generous handful, chopped flat-leaf parsley
1 lemon, zested
1 tablespoon chopped thyme, 4 sprigs
1 package, 12 to 16 ounces fresh or frozen store bought gnocchi (potato pasta)
3 tablespoons butter
1/4 teaspoon freshly grated nutmeg, eyeball it
2 to 3 tablespoons chopped chives, 10 blades

Steps:

  • ** This dish uses Rosso di Montalcino wine (an affordable, younger version of Brunello -- I call it "Baby Brunello") but you can substitute any dry red wine you like.
  • Heat a deep skillet over medium high heat. Add extra-virgin olive oil, 4 turns of the pan, and the cut pancetta. Brown the pancetta, 3 to 4 minutes then remove with a slotted spoon and reserve.
  • Place a pot of water on the stove to boil for the gnocchi.
  • While pancetta browns, season the chicken chunks with salt and pepper and dredge in a little flour then add to the hot pan. Brown the pieces a few minutes on each side over high heat, then scoot the meat to the edges of the pan and add the onions, garlic and chopped figs. Saute 5 minutes, combine chicken with onions and figs then add the wine and cook it down 5 minutes or so until only about 1/3 cup remains. Add chicken stock, parsley, lemon zest and thyme to the chicken and stir to combine. Reduce heat to simmer cook another 10 minutes, while you make the gnocchi.
  • Add salt and gnocchi to boiling water and cook to package directions, drain, 4 minutes for fresh gnocchi, 6 minutes for frozen. Heat a medium nonstick skillet over medium-low heat. Melt butter and brown it. Drain gnocchi and add to skillet. Raise heat to medium-high and lightly brown the dumplings. Season gnocchi with salt, pepper and nutmeg, turn to coat and add chives, toss and remove from heat.
  • Adjust the seasonings on the chicken with figs. If you would like a little more sauce, shake another half cup of stock into the pan. Serve the chicken and figs in shallow dishes, the gnocchi piled in the center of the bowl on top of the chicken. Garnish with crisp pancetta sticks.

1 rotisserie-cooked chicken
2 tablespoons olive oil
1 medium onion, sliced thin
2 -3 carrots, cut into Matchsticks
4 -5 celery ribs, cut into Matchsticks
2 small zucchini, cut into Matchsticks

1/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1 lb wide egg noodles
1 tablespoon butter

Steps:

  • Remove the skin and bones from the chicken and shred the meat or cut into chunks.

From the Food Network, Rachael says "a stoup is thicker than a soup and thinner than a stew". I must make all my soups as stoups, since it isn't any thicker than other soups I have made. That aside, this is a very tasty soup -- one that I will make often. I cut up all my veggies ahead of time and made the recipe as posted except I didn't use the black olive tapenade because my store doesn't carry it and I stirred the parsley into the stoup while it was simmering. I also let it simmer on the stove for 20-30 minutes because I wasn't ready to serve dinner yet and it was fine. It is excellent and definitely a keeper!

2 garlic cloves, chopped (I minced)
2 tablespoons extra virgin olive oil
1 medium zucchini

1 cup dry white wine

1 lb boneless skinless chicken tenders, diced
4 teaspoons black olive tapenade (1 tsp. per bowl of stoup)
2 tablespoons chopped flat leaf parsley

Steps:

  • Preheat medium soup pot over medium-high heat.
  • While soup pot heats, chop carrots into 1/4-inch dice.
  • Put carrots and garlic into pan and stir to coat with olive oil.
  • Chop and drop in the zucchini, pepper, and onion.
  • Season all the veggies with salt and pepper and herbes de Provence.
  • Cook the vegetables together 5 minutes.
  • While they cook, cut the potatoes into thin wedges.
  • Add wine to vegetables and reduce for a minute or so.
  • Add the tomatoes, potatoes, and stock to the pot, cover the pot and raise heat to high.
  • Bring the stoup to a boil, then add the chicken and lower heat and simmer 8 to 10 minutes until potatoes are tender and chicken is cooked through.
  • Serve stoup in bowls and stir in a rounded spoonful of black olive tapenade at the table.
  • Top soup with chopped parsley and serve with a crusty bread.

1 cup chicken broth
2 tablespoons flour
1 onion, chopped
1 red bell pepper, chopped
1 cup heavy cream
2 green onions, chopped
