RACHAEL RAY'S CHICKEN CUTLET PARMIGIANO

I found this recipe in RR's cookbook, 365: No Repeats, but it is definitely a repeat! Rachel's recipe calls for Turkey cutlets but I use chicken. I also added serving it over angel hair pasta. It tastes so special but it is really simple to make. Don't let the long recipe list scare you. The sauce is oh so easy and oh so yummy!

2 tablespoons olive oil
1 medium yellow onion, chopped
3 garlic cloves, chopped
salt

3 tablespoons flour
2 eggs
1 cup Italian seasoned breadcrumbs, panko is good
1/2 cup parmesan cheese, grated
4 -6 chicken breasts, cutlets
1 pint grape tomatoes
1/2 cup white wine
4 ounces mozzarella cheese, shredded
8 ounces angel hair pasta, cooked according to package directions

  • Heat some olive oil in a medium skillet over medium-high heat. Add onions, garlic, salt and pepper. Cook until onions are translucent, 2-3 minutes.

Time 30m

Yield 4 servings

Number Of Ingredients 16

1 1/2 cups bread crumbs
1/2 cup grated Parmigiano-Reggiano
A little fresh grated nutmeg
A handful flat-leaf parsley, finely chopped
1 orange, zested
1 cup all-purpose flour
3 eggs, beaten
4 small boneless, skinless chicken breasts, about 6 ounces each
Salt and freshly ground black pepper
Olive oil or vegetable oil, for frying
2 seedless oranges
2 yellow or orange tomatoes, seeded and diced

1/2 small red onion or 2 to 3 scallions, chopped
2 tablespoons extra-virgin olive oil
4 cups baby arugula leaves

Steps:

  • Combine the bread crumbs, cheese, nutmeg, parsley, and orange zest in a shallow bowl. Put the flour in another bowl and the eggs in a third bowl.

Once the chicken is butterflied, lightly pound the chicken between waxed paper, parchment or plastic wrap into 4 large, very thin cutlets. Season the cutlets with salt and pepper and coat with the flour, then the egg and then the bread crumbs.
  • Heat a 1/2-inch of frying oil in very large skillet over medium to medium-high heat. When the oil is hot, add the cutlets 1 or 2 at a time, depending on the size of the pan. As cutlets are done, transfer to a baking rack to drain. Cutlets may be served room temperature but you want them to remain crisp.
  • While the cutlets cook, working next to the stove, peel and section the oranges and dice. Add them to a large bowl along with the tomatoes, oregano, if using, onion, extra-virgin olive oil and salt and pepper, to taste. Toss and when ready to serve fold in the arugula leaves.
  • Transfer the cutlets to serving plates and top with mounds of orange and arugula salad before serving.

Tips:

  • To ensure the chicken breasts are evenly cooked, use a meat mallet or rolling pin to pound them to an even thickness before breading.
  • For a crispier crust, use panko breadcrumbs instead of regular breadcrumbs.
  • To prevent the chicken from sticking to the pan, make sure the oil is hot before adding the chicken cutlets.
  • Do not overcrowd the pan when frying the chicken cutlets. This will prevent them from cooking evenly.
  • To save time, you can use store-bought marinara sauce instead of making your own.
  • Top the chicken cutlets with plenty of mozzarella cheese before baking. This will help to create a gooey, melted cheese layer.
  • Serve the chicken cutlets with your favorite sides, such as spaghetti, mashed potatoes, or roasted vegetables.
