RACHEL'S OVEN FRIES / ROASTED POTATO WEDGES
Potatoes made tasty and simple. This is good for 2 people to share, so use the recipe multiplier for more servings. Makes a healthier substitute for french fries, and a great side dish for a hearty meal in place of mashed or baked potatoes. I like this particular herb mix, but feel free to use pretty much any kind of seasoning in a 1/2 tsp-1 tsp amount. Montreal Chicken Rub is the perfect seasoning for this! And, this is vegan.

Tidbit: This makes a tasty picnic. Pack soup in a thermos and, rather than fries, buy a sack of olive oil and rosemary, garlic and onion or herb-flavored specialty potato chips, such as Terra brand, from the snack aisle of the market.

Steps:
- Heat oven to 550 degrees (or as high as your oven goes).
- Halve each potato, then cut each half in 5 slices lengthwise. Place on a baking sheet and drizzle the olive oil over them, work the potatoes around in the oil until evenly coated.
- Season with the rosemary, salt, pepper and red pepper. (I recommend LOTS of salt and I'm not big on super salty foods.) Throw the garlic cloves on the sheet with the potatoes.
- Roast 25 minutes. Make sure to turn them all once at the halfway point or they will end up sticking to the baking sheet.

OVEN-BAKED POTATO FRIES
This is a great recipe to get kids started learning how to cook. Take a day, take a week, teach them new things each day. We used this for our 'at-home' camp week. Taught the kids how to cook one new thing each day for an entire week.

Tips:
- Choose the right potatoes: Russet potatoes are the best choice for oven fries because they have a high starch content, which makes them crispy on the outside and fluffy on the inside. Yukon Gold and red potatoes can also be used, but they will not be as crispy.
- Cut the potatoes into even-sized wedges: This will help them cook evenly. If the wedges are too thick, they will take longer to cook and may not get crispy.
- Toss the potato wedges with olive oil, salt, and pepper: This will help them brown and crisp up in the oven. You can also add other spices, such as garlic powder, paprika, or chili powder.
- Spread the potato wedges in a single layer on a baking sheet: This will help them cook evenly. If the wedges are crowded on the baking sheet, they will steam instead of roast.
- Roast the potato wedges at a high temperature: This will help them get crispy. The ideal temperature is 425 degrees Fahrenheit.
- Flip the potato wedges halfway through cooking: This will help them brown evenly.
- Serve the potato wedges immediately: They are best when they are hot and crispy.
Conclusion:
Oven fries are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They are a great way to use up leftover potatoes, and they can be customized to your own taste preferences. With a few simple tips, you can make perfect oven fries every time.
