PISTACHIO CRUSTED RACK OF LAMB
The pistachio and mustard crust gives this lamb dish an interesting flavor and texture. Sure, rack of lamb is a little pricey, but no more so than other special occasion meats like prime rib, beef tenderloin, or goose. And, because rack of lamb is sold completely trimmed, you'll have virtually no waste.

HERBED RACK OF LAMB
We've raised sheep for years, so lamb has been a staple entree in our house as well as a favorite to serve when company comes. We do our own butchering and can cut the meat any way, but we've found the rack yields a perfect amount of meat for just the two of us. -Margery Bryan, Moses Lake, Washington

Tips:
- Choose the right rack of lamb: Opt for a rack of lamb that is evenly marbled and has a good amount of fat. This will ensure that your lamb is tender and flavorful.
- Trim the lamb: Remove any excess fat or sinew from the lamb before cooking. This will help to prevent the lamb from becoming tough.
- Season the lamb: Generously season the lamb with herbes de Provence, salt, and pepper. You can also add other herbs and spices to your liking.
- Sear the lamb: Sear the lamb in a hot skillet until it is browned on all sides. This will help to create a flavorful crust and lock in the juices.
- Roast the lamb: Transfer the lamb to a roasting pan and place it in a preheated oven. Roast the lamb until it reaches your desired level of doneness. A medium-rare lamb will have an internal temperature of 135 degrees Fahrenheit.
- Let the lamb rest: Allow the lamb to rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the meat, resulting in a more tender and flavorful lamb.
Conclusion:
Rack of lamb with herbes de Provence is a delicious and elegant dish that is perfect for a special occasion. By following the tips above, you can create a rack of lamb that is tender, flavorful, and sure to impress your guests.
