RADICCHIO-PASTA SALAD

Radicchio-Pasta Salad image

The dressing for this salad dressing combines a favorite flavor combo of mine, orange and oregano. The pasta is tossed with the sweet-tangy dressing, bitter red greens and onions. It may not be for everyone but it's definitely a favorite of mine.

Yield Serves 2

Number Of Ingredients 11

1/3 pound orecchiette (ear-shaped pasta) or farfalle (bow-tie pasta)
2 tablespoons olive oil
1/2 pound fresh white mushrooms, sliced
1/2 pound fresh shiitake mushrooms, stems discarded and caps sliced
1 large garlic clove, minced
3 tablespoons red-wine vinegar
1/2 cup low-salt chicken broth
3/4 cup frozen baby peas, thawed
1/2 teaspoon Dijon mustard
1/4 pound radicchio, shredded (about 2 cups)
1/3 cup freshly grated Parmesan cheese

Steps:

  • In a kettle of boiling salted water cook pasta until al dente.
  • While pasta is cooking, in a large non-stick skillet heat 1 tablespoon oil over moderately high heat until hot but not smoking and sauté all mushrooms with salt and pepper to taste, stirring occasionally, until golden brown. Add garlic and 1 tablespoon vinegar and cook, stirring, 1 minute. Add broth and peas and simmer 3 minutes.
  • Drain pasta in a colander and stir into mushroom mixture. Toss mixture and remove skillet from heat. In a large bowl whisk together mustard, remaining tablespoon oil, and remaining 2 tablespoons vinegar until blended. Add radicchio and toss to coat with dressing. Add pasta mixture and Parmesan and toss well.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your pasta salad. Choose ripe tomatoes, crisp cucumbers, and tender radicchio.
  • Don't overcook the pasta: Al dente pasta is the perfect texture for pasta salad. It should be slightly firm to the bite.
  • Let the pasta salad cool before serving: This will help the flavors to meld and the pasta to absorb the dressing.
  • Choose a flavorful dressing: A good dressing will bring all the flavors of the pasta salad together. Try a vinaigrette made with olive oil, red wine vinegar, Dijon mustard, and herbs, or a creamy dressing made with mayonnaise, sour cream, and lemon juice.
  • Add some crunch: Nuts, seeds, and croutons add a nice crunchy texture to pasta salad.
  • Experiment with different ingredients: There are endless possibilities when it comes to making pasta salad. Try adding different vegetables, cheeses, meats, or seafood.

Conclusion:

Radicchio pasta salad is a refreshing and flavorful dish that is perfect for summer gatherings. With its combination of crisp vegetables, tender pasta, and flavorful dressing, this salad is sure to be a hit. So next time you're looking for a light and easy meal, give radicchio pasta salad a try. You won't be disappointed!
