PERFECT ROASTED LEG OF LAMB

Perfect Roasted Leg of Lamb image

This easy no-fail roasted leg of lamb recipe, with a special Mediterranean seasoning, will give you the BEST lamb roast every single time! Remember, the best lamb leg is either cooked to perfect pink inside (internal temp somewhere around 130°F) or until the meat falls off the bone (internal temp somewhere around 175°F or beyond). Just avoid cooking your lamb to the in-between stage which can be tough. I like to cook some potatoes in the same pan to complete the meal. Add a big Mediterranean salad of your choice, you can't go wrong with Greek salad for this one.

Number Of Ingredients 17

1 4 to 5 pound leg of lamb, (bone-in, fat trimmed)
Salt and pepper
Extra virgin olive oil
5 garlic cloves, (peeled and sliced; more for later)
2 cups water
8 gold potatoes, (peeled and cut into wedges)
1 yellow onion, (peeled and cut into wedges)
1 teaspoon paprika, (more for later)
1 teaspoon all-natural garlic powder
Fresh parsley for garnish, (optional)
15 garlic cloves, (peeled)
2 tablespoons dried oregano
2 tablespoons dried mint flakes
1 tablespoons paprika
1/2 tablespoons nutmeg
1/2 cup Extra virgin olive oil
2 lemons, (juice of)

Steps:

  • Bring the leg of lamb to room temp. Take the leg of lamb out of the refrigerator and leave in room temperature for about 1 hour. In the meantime, prepare the remaining ingredients and make the lamb rub.
  • Prepare the seasoning. To make the rub or seasoning, in a food processor, combine the rub ingredients. Blend until smooth. Set aside (or in the fridge, if preparing in advance).
  • Salt the meat. When ready, pat the lamb dry and make a few slits on both sides. Season with salt and pepper.
  • Sear the Lamb. Turn the oven on broil. Place the leg of lamb on a wire rack and put it directly on the top rack so that it's only a few inches away from the broiler element. Broil for 5-7 minutes on each side or until the leg of lamb is nicely seared. Remove from the oven, then adjust the oven temperature to 325 degrees F.
  • Apply the seasoning or rub. When the lamb is cool enough to handle, insert the garlic slices in the slits you made earlier. Now cover the leg of lamb on all sides with the wet rub and place it in the middle of a roasting pan with an inside rack. Add two cups of water to the bottom of the roasting pan.

RAIN-OR-SHINE LEG OF LAMB

Butterflying your lamb not only means it cooks quicker, but it can be barbecued as well as roasted

Provided by James Martin

Categories     Lunch, Main course

Time 45m

Number Of Ingredients 5

1 leg of lamb , about 2kg/4lb 8oz, butterflied
2 tbsp rapeseed oil
2 tsp caraway seed , crushed
1 tbsp chopped thyme leaf
1 large bunch parsley , chopped

Steps:

  • Take the lamb out of the fridge an hour or so before cooking to allow it to come up to room temperature. Heat oven to 220C/200C fan/gas 7 or light the barbecue. Mix together the oil, caraway seeds, thyme and parsley with lots of salt and pepper. Smear this all over the lamb, rubbing it well into the meat. You can do this up to a day before.
  • If you are cooking the meat on the barbecue, wait until the fire has died down and the coals are white and glowing. Lay the meat, skin-side down, onto the bars and cook for 15 mins. Flip over and cook for a further 15 mins for slightly pink lamb, or 5 mins longer if you want the meat well done. Remove and leave to rest on a tray, covered with foil, for at least 15 mins. To cook the lamb in the oven, place it on a large shallow baking tray, cook for 15 mins, then turn down the oven to 180C/160C fan/gas 4 and cook for a further 15 mins. Leave to rest for 15 mins. Once the meat has rested, slice it up and pour over any juices from the resting tray.

BOMBAY LEG OF LAMB WITH YOGURT AND LIME

Bombay Leg Of Lamb With Yogurt And Lime image

This recipe came to The Times when Amanda Hesser wrote about Rozanne Gold, the author of "Recipes 1-2-3," and her three-ingredient cooking. The bare-bones marinade here really lets the lamb shine, so make sure to get quality meat. Ms. Gold proves that with fewer ingredients, shopping becomes less painful, and cooking times and techniques tend to be simpler.

Time 25m

Yield 4 servings

Number Of Ingredients 5

1 2-pound boned leg of lamb, butterflied
1 cup plain low-fat yogurt
2 large limes
Freshly ground black pepper, to taste
1/4 teaspoon kosher salt

Steps:

  • In a large nonreactive bowl, combine lamb and yogurt. Grate zest of 1 lime, and squeeze the juice of 2 limes (you will have approximately 1/4 cup). Add to bowl with freshly ground black pepper and the salt. Mix well so that lamb is thoroughly coated with yogurt marinade. Cover, and refrigerate for 6 to 8 hours. Turn once or twice during the marinating period.
  • Preheat the broiler. Remove lamb from the marinade. Place lamb in a heavy baking pan. Place marinade in a small pot.
  • Broil lamb on each side for 6 to 8 minutes. It should be 150 degrees on a meat thermometer for rare; 160 degrees for medium-rare. Meanwhile, warm marinade over low heat, whisking constantly; do not let boil. Remove lamb from oven. Let rest 5 minutes. Slice thinly, and serve with marinade (if curdled, pour through a fine strainer).

ROAST LEG OF LAMB

Roast Leg of Lamb image

This recipe gives the traditional lamb a bit of a lift. The anchovies might seem strange in a meat dish, but they do enhance the flavour and are not at all fishy. The use of red currant jelly both sweetens and enriches the gravy - no gravy browning or stock cubes are necessary.

Provided by Andy Jewell

Categories     Lamb/Sheep

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 8

2 kg leg of lamb
malt vinegar
1 garlic clove, thinly sliced
1 sprig fresh rosemary
2 anchovy fillets, cut into slivers
1 tablespoon olive oil
1 cup red wine
2 teaspoons red currant jelly

Steps:

  • Sprinkle the lamb joint with malt vinegar and thoroughly dry it.
  • Using a sharp knife, make a series of deep cuts all over the meat.
  • Stuff a slice of garlic, a couple of rosemary leaves and a sliver of anchovy into each cut, pushing them deep into the meat.
  • Rub the olive oil all over the lamb joint.
  • Place a roasting tin into the oven and preheat to very hot (220°C).
  • Place the lamb joint in the roasting tin and cook for 15 minutes per pound with 15 minutes over (reduce the cooking time by 10-15 minutes if you prefer a pinker joint).
  • About half an hour before the end of cooking, pour half the wine over the joint.
  • Remove the lamb from the oven and put it in a warm place to set.
  • Meanwhile, deglaze the roasting tin with the remaining wine scraping with a metal spoon to incorporate all the meat juices.
  • Add the red currant jelly and stir to dissolve.
  • Strain the juices into a pan and add some of the water you have cooked the vegetables in (thickening with cornflour- if liked) and bring to the boil.
  • Carve the lamb into thick slices and serve with new potatoes, vichy carrots and peas accompanied with mint sauce and the gravy.

LEG OF LAMB

Leg of Lamb image

Rubbed with garlic, lavender, and other spices, this roast is the perfect centerpiece for a celebration.

Provided by Jessica B. Harris

Yield Serves 4 to 6

Number Of Ingredients 8

1 shank-end, half-bone-in leg of lamb, 4 or 5 pounds
6 large garlic cloves
1½ teaspoons dried lavender flowers
1 tablespoon fresh thyme leaves
1½ tablespoons finely ground sea salt
2 tablespoons mixed peppercorns
1 tablespoon dried rosemary
1 tablespoon herbes de Provence

Steps:

  • Preheat the oven to 450°F. If the butcher has not already removed the fell (parchmentlike membrane) from the lamb leg, trim it away along with all excess fat. Using the tip of a sharp knife, make 15 or so small incisions in the leg, spacing them evenly.
  • Place the garlic, lavender, and thyme in a small food processor and pulse until you have a thick paste. Poke a bit of the paste into each of the incisions in the lamb. Place the salt, peppercorns, dried rosemary, and herbes de Provence in a spice grinder and pulse until you have a coarse mix. Rub the mix all over the lamb, covering it evenly. Place the lamb on a rack in a roasting pan.
  • Roast the lamb for 15 minutes. Lower the heat to 350°F and continue to roast for about 1 hour, or until a thermometer inserted into the thickest part away from the bone registers 130°F for rare, 140° to 145°F for medium-rare, or 160°F for well-done. Cooking times will vary depending on the shape of the lamb and the consistent heat of your oven. Remove the lamb from the oven and let it rest for 15 minutes before carving.
  • Carve the lamb parallel to the bone in long, thin slices and arrange the slices on a platter. Transfer the warm sauce to a sauceboat and serve immediately.

Tips:

  • Choose the right cut of lamb: Leg of lamb is a classic choice for roasting, as it is a large, flavorful cut that can be cooked in a variety of ways.
  • Marinate the lamb: Marinating the lamb in a flavorful mixture of herbs, spices, and liquids helps to tenderize the meat and add flavor.
  • Cook the lamb to the right temperature: The ideal internal temperature for roasted leg of lamb is 145 degrees Fahrenheit for medium-rare, 160 degrees Fahrenheit for medium, and 170 degrees Fahrenheit for well-done.
  • Let the lamb rest before carving: Allowing the lamb to rest for 10-15 minutes before carving helps the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
  • Serve the lamb with a variety of sides: Roasted leg of lamb can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or a simple green salad.

Conclusion:

Roasted leg of lamb is a delicious and versatile dish that can be enjoyed by people of all ages. With careful preparation and cooking, you can create a memorable meal that will impress your guests. Whether you are a seasoned chef or a novice cook, the recipes in this article will help you create a delicious and memorable roasted leg of lamb dish.
