Time 45m

Yield 12 skewers (serving size 2 skewers)

Number Of Ingredients 7

1 kiwi, peeled
1 large orange, peeled
1/2 cup blueberries
1 cup pineapple chunks
12 chocolate dipped strawberries, recipe follows
2 1/2 ounces dark chocolate
1 pound strawberries, washed and trimmed

Steps:

  • Cut the kiwi and orange crosswise into 4 rounds, then cut each round into 3 pieces, so you end up with 12 pieces of each fruit. To prepare the skewers, put 2 blueberries about 1/3 of the way down the skewer, add a piece of kiwi, a pineapple chunk, a piece of orange, and top with a chocolate dipped strawberry.;
  • Line a tray with waxed paper. Break up the chocolate into small pieces and place about two thirds of it into the bowl of a double boiler over barely simmering water. Make sure that the bottom of the bowl does not touch the water. Stir occasionally, very gently, until the chocolate has melted, about 1 minute. Remove the bowl from the double boiler and add the rest of the chocolate, stirring gently until it has melted. Dip the strawberries in the chocolate, place on the waxed paper and chill in the refrigerator for 15 minutes until chocolate is set.

My kids loved helping me make these Rainbow Fruit Kabobs! They are such a fun, healthy snack!

Provided by Six Sisters Stuff

Yield 12

Number Of Ingredients 9

strawberries, halved
cantaloupe, cut into bite-sized pieces
pineapple, cut into bite-sized pieces
green grapes
blueberries
red grapes
bamboo skewers
1 (8 ounce) container whipped cream cheese
1 (7 ounce) container marshmallow creme

Steps:

  • Slide a piece of strawberry, cantaloupe, pineapple, a green grape, two blueberries and a red grape onto each skewer; set aside.
  • In a mixing bowl, beat together whipped cream cheese and marshmallow creme until smooth. Refrigerate until serving.

Tips:

  • Choose a variety of fruits: Use a mix of colors and flavors to make your skewers visually appealing and delicious. Some good options include strawberries, blueberries, pineapple, watermelon, grapes, and oranges.
  • Cut the fruit into uniform pieces: This will help them cook evenly and look more appetizing. If you are using a variety of fruits, cut them into pieces that are all about the same size.
  • Use fresh fruit: Fresh fruit is always best for fruit skewers. If you are using frozen fruit, thaw it completely before assembling the skewers.
  • Don't overcrowd the skewers: Leave some space between the pieces of fruit so that they can cook evenly. If you overcrowd the skewers, they will be difficult to turn and may not cook through.
  • Cook the skewers over medium heat: This will help prevent the fruit from burning. Cook the skewers for 5-7 minutes per side, or until the fruit is tender and slightly caramelized.
  • Serve the skewers immediately: Fruit skewers are best served warm. You can drizzle them with honey, syrup, or melted chocolate for an extra touch of flavor.

Conclusion:

Rainbow fruit skewers are a fun and easy way to enjoy fresh fruit. They are perfect for parties, picnics, and potlucks. With a variety of colors and flavors, rainbow fruit skewers are sure to be a hit with everyone. So next time you are looking for a healthy and delicious snack or side dish, give rainbow fruit skewers a try.
