1 tablespoon Dijon mustard

One 1-pound bag sweet mini peppers
3 tablespoons olive oil
3 tablespoons white wine vinegar
1 tablespoon sugar
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
8 links (about 2 pounds) sweet or hot Italian sausage links

Steps:

  • Add peppers, olive oil, vinegar, sugar, granulated garlic, salt and pepper to a large skillet and toss to coat. Place the skillet over medium-high heat and saute the peppers until they start to get slightly tender, 3 to 5 minutes. Nestle in the sausages amongst the peppers and lower the heat to low, then cover and gently simmer until the sausages are about 145 degrees F, 5 to 10 minutes.
  • Meanwhile, preheat a grill or grill pan over medium-high heat. Remove the sausage from the skillet and grill until charred and the internal temperature reaches 165 degrees F, about 10 minutes. Place back in the skillet with the mini sweet peppers and serve.

1 large green pepper
1 large orange bell pepper
1 large yellow pepper
1 large red pepper
1 large purple bell pepper (great if you can find it)
1 large carrot
1 onion, coarsely chopped
2 cloves garlic, finely sliced
1 cup brown sugar
1 cup sesame seeds
salt, black and red pepper to taste

Steps:

  • Cut the peppers into strips.
  • Peel the carrot and cut into very thin strips.
  • Stir-fry in oil with the onion until the onion becomes translucent.
  • Add the garlic and fry 1 minute longer.
  • Add the brown sugar, sesame seeds and seasonings.
  • Stir-fry for one minute longer.
  • Remove from heat and serve.

1 green bell pepper
1 large red bell pepper
1 large orange bell pepper
1 yellow bell pepper
8 cloves garlic
½ lemon
3 cups vegetable broth
¼ teaspoon garlic salt
ground black pepper to taste
1 teaspoon fennel seed
¼ teaspoon dried thyme

Steps:

  • Preheat oven to 375 degrees F (190 degrees C) , halve all peppers (remove seeds) and peel garlic.
  • Place halved peppers, cut side up in shallow baking dish. Place one garlic clove in each half and squeeze lemon juice generously over peppers. Roast for 1 hour.
  • Meanwhile pour vegetable broth into a 2 quart sauce pan and add fennel seeds. Bring to boil, cover and simmer.
  • When peppers are done, remove from oven and set aside to cool. When cool enough to touch peel skin from peppers.
  • Strain fennel seeds from broth and return to a boil. Add thyme and simmer 15 minutes, reducing amount of broth.
  • Slice a 1 inch section from each color of pepper and cut into pieces. Set aside for later garnishing.
  • In a blender, place remaining peppers, garlic and a 1/2 cup broth on blend just long enough to shred the peppers, but not puree them. You want to see the different colors. Pour the blended peppers into the broth and stir well. Add garlic salt and black pepper to taste, then add garnishing pepper pieces and enjoy. Do not boil or cook any longer as the colors will fade.

1 tablespoon balsamic vinegar
1 teaspoon honey
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Heat oven to 400°F. Cut bell peppers in half; remove seeds. (For larger peppers, cut lengthwise in half again.)
  • In medium bowl, toss bell peppers, onions, garlic, oil and Italian seasoning. Spoon mixture into 13x9-inch pan.

Steps:

  • add the oil, mince, onions, stock, frozen peppers, garlic and oregano to a large, deep frying or wok and cook on a medium heat until browned, whilst browning chop one medium aubergine into thick slices and slice your 6 tomatoes into medium slices too. Brown the mince mix for 20mins
  • Pour some vegetable oil onto the aubergines along with a pinch of oregano and a pinch of garlic granules and grill for 10mins +- depenadnt on your cooker, add the tomatoes, passata, more oregano, chopped tomatoes, butter beans and aromat to the beef mix and cook for a further 8 mins until simmering.
  • Pour the Beef mixture into a oven dish cover with the grilled aubergine, spoon over the natural yogurt and then sprinkle on the cheese.
  • put the oven dish in a preheated oven until the topping is bubbling around 10-15 mins.
  • Serve the dish immediately with a nice green salad and paprika potatoes, mmmmm delicious

2 large sweet potatoes, sliced
4 red potatoes, cubed
1 large onion, sliced into rings
1 teaspoon minced garlic
2 green bell peppers, sliced
2 red bell peppers, sliced
2 carrots, shredded
¼ cup Italian-style seasoning

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the bottom of a 9x13 inch baking dish with oil. Spread sweet potatoes on the bottom, then top with red potatoes, onion, garlic, green bell peppers, red bell peppers and carrots. Sprinkle seasoning generously over all and cover dish with aluminum foil.
  • Bake at 350 degrees F 1 1/2 hours or until potatoes are cooked through and tender; remove foil cover and stir.
