Discovered this recipe when I first started cooking and collecting recipes in junior high school. A nice light quick bread with a sweet crunchy topping.

Number Of Ingredients 14

2 1/4 cups flour
3/4 cup oatmeal
1/3 cup all-bran cereal
4 teaspoons baking powder
1 teaspoon salt
1 1/2 teaspoons cinnamon
3/4 cup brown sugar
1 1/4 cups milk
2 eggs, beaten
1/2 cup oil
1 -1 1/2 cup raisins
1/3 cup oatmeal
1/4 cup brown sugar
1 tablespoon butter, softened

Steps:

  • Preheat oven to 325.
  • Grease bottom only of a 9x5x3-inch loaf pan.
  • TOPPING--------.
  • In a small bowl, combine oatmeal, brown sugar, and butter mixing till crumbly; set aside.
  • BATTER---------.
  • In a large bowl mix together flour, oatmeal, bran cereal, baking powder, salt, cinnamon, and brown sugar.
  • Stir in milk, eggs, and oil; mixing just to moisten.
  • Fold in raisins.
  • Spoon into prepared pan.
  • Sprinkle evenly with topping.
  • Bake for 1 hour and 15 to 20 minutes or until toothpick inserted in center comes out clean.
  • Cool on rack 10 minutes.
  • Remove from pan.
  • Cool completely.

1 cup plus 1 tablespoon water (70° to 80°)
1/4 cup packed brown sugar
2 tablespoons butter, softened
1-1/2 cups raisin bran
1/2 teaspoon salt
1/4 teaspoon baking soda
2-1/4 cups bread flour
2-1/4 teaspoons active dry yeast
1/2 cup raisins

Steps:

  • In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add the raisins.

2 cups Raisin Bran cereal, Divided
1 1/4 cups nonfat milk
1/4 cup margarine, melted, divided
1 egg
3/4 cup sugar
2 cups flour
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1 tablespoon sugar

Steps:

  • Pre-heat oven to 350 deg F.
  • Mix 1 ½ cups of Raisin Brand, Milk, 2 tablespoons of the Margarine in bowl.
  • Add Egg and ¾ cup Sugar, mix well.
  • Stir in Flour, Baking Powder and Cinnamon.
  • Mix till well blended.
  • Put in sprayed 9X5 loaf pan.
  • Mix remaining ½ cup of cereal, 2 tablespoons Margarine and 1 Tablespoon Sugar.
  • When well blended sprinkle over batter and press into the batter.
  • Bake 50 minutes. Cool 10 minutes before removing from pan.

1/2 cup raisins

  • Preheat oven to 350°. In a large bowl, combine flour, 1-1/2 cups sugar, soda and salt. In a small bowl, whisk eggs, buttermilk and oil. Stir into dry ingredients just until moistened. Post Raisin Bran has the biggest flakes, which makes it look especially pretty for presentation, but any raisin bran cereal will do. =^..^=

4 tablespoon(s) butter or margarine, divided into 2 + 2 tablespoons
2 cup(s) raisin bran cereal, divided into 1-1/2 + 1/2 cup
1 1/4 cup(s) milk
1 - egg
3/4 cup(s) white sugar
2 cup(s) all-purpose flour
1 tablespoon(s) baking powder
1/2 teaspoon(s) ground cinnamon, see step #11
1/2 cup(s) chopped walnuts, optional
1 tablespoon(s) white sugar
some - walnut halves for decorating, optional

Steps:

  • Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.
  • Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.
  • Add egg and 3/4 cup sugar, mixing well with a large spoon.
  • Stir in flour, baking powder, and cinnamon until well-blended.
  • Mix in the chopped walnuts, if desired.
  • Spread into prepared loaf pan.
  • FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.
  • Gently press topping and walnut halves into the batter.
  • Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...
  • ...OR serve warm with butter or cream cheese. =^..^=
  • OPTION: In place of cinnamon, add 1 tsp. vanilla extract with the milk in Step #2.

1 cup whole-grain cornmeal
