FILLING:
3/4 cup (175 mL) packed dark brown sugar
3/4 cup (175 mL) corn syrup
1/2 cup (125 mL) unsalted butter, melted
2 eggs, at room temperature
1 teaspoon (5 mL) white vinegar
1 teaspoon (5 mL) vanilla extract
1/2 cup (125 mL) golden raisins or dark raisins

Steps:

  • Pull the pie dough from the refrigerator 30 minutes before rolling. (See Double-Crust Pie Dough Recipe) Preheat oven to 400 F (200 C)and lightly grease a 12-cup muffin tin. Lightly dust a work surface with flour and unwrap the pastry logs. Slice each log into six pieces.
