OLD FASHIONED RAISIN BARS

Provided by CJAY8248

Categories     Bar Cookie

Time 40m

Yield 24 bars, 12 serving(s)

Number Of Ingredients 14

1 cup raisins
1 cup water
1/2 cup salad oil or 1/2 cup shortening
1 slightly beaten egg
1 cup sugar
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1/2 teaspoon clove
1/2 cup walnuts, chopped

Steps:

  • Combine raisins and water in a saucepan; bring to a boil. Remove from heat. Stir in salad oil, cool to lukewarm. Stir in sugar and egg. Sift together dry ingredients; beat into raisin mixture. Stir in nuts. Pour batter into greased 9 x 13" pan. Bake at 350* for 20 minutes or until done. When cooled cut into bars. Dust with powdered sugar.

Tips:

  • Properly measure ingredients: Use a kitchen scale to accurately measure ingredients, especially flour and sugar, to ensure the correct consistency and texture of the raisin squares.
  • Cream butter and sugar thoroughly: This step helps incorporate air into the mixture, resulting in a light and fluffy batter. Creaming the butter and sugar until light and fluffy usually takes several minutes.
  • Gradually add eggs: Add the eggs one at a time, beating well after each addition. This helps prevent the batter from curdling.
  • Do not overmix the batter: Overmixing can toughen the raisin squares. Mix just until the ingredients are combined.
  • Use a variety of raisins: For a more complex flavor and texture, use a combination of different types of raisins, such as golden raisins, dark raisins, and sultanas.
  • Do not overbake the raisin squares: They should be slightly golden brown on top. Overbaking will dry them out.

Conclusion:
