2 celery ribs, diced

½ tsp Italian herbs
¼ tsp dried thyme
1 Tbsp soy sauce
1 ½ Tbsp Dijon mustard
1 Tbsp tomato paste

3 cups (720 ml) low-sodium vegetable broth or water

3 large russet potatoes, scrubbed
2 shallots
3 teaspoons kosher salt
