CRUNCHY PEA SALAD (HIDDEN VALLEY RANCH)

Crunchy Pea Salad (Hidden Valley Ranch) image

I got to taste this at a DAV (disabled American veterans) sponsored luncheon. It was really fantastic, so I asked for the recipe, never expecting to get it. I personally don't add the bacon because I don't need it...the salad is crunchy and nummy on it's own. I add the cashews before I serve so that they stay crunchy too.

Categories     Lunch

Time 15m

Yield 16 servings.

Number Of Ingredients 8

1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 cup chopped celery

1/4 cup chopped green onions
1 large tomato, seeded and chopped
2 cups shredded lettuce
2/3 cup fat-free ranch salad dressing

Steps:

  • In a large bowl, combine all ingredients; toss lightly. Serve immediately.

Nutrition Facts :

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • If you don't have fresh peas, you can use frozen peas that have been thawed.
  • Be sure to drain the peas well before adding them to the salad.
  • You can use any type of cucumber you like in this salad. English cucumbers are a good choice because they have a mild flavor and are not as watery as some other varieties.
  • If you don't have fresh herbs, you can use dried herbs instead. Just be sure to use a light hand, as dried herbs can be more potent than fresh herbs.
  • For a more flavorful salad, you can marinate the dressing for at least 30 minutes before using it.
  • This salad is best served fresh, but it will keep in the refrigerator for up to 3 days.

Conclusion:

This ranch pea salad is a delicious and refreshing side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and flavorful salad, give this recipe a try.
