I am always on the lookout for those quick and easy side dishes to serve during the week. This is a great recipe for those of us who have full time job, then go home to our second job....cheif cook and bottle washer. Great for all those students out there also!!!!

6 slices bacon, diced
1 (4 1/2 ounce) jar sliced mushrooms, drained
2 tablespoons finely chopped onions
2 (12 ounce) cans mexicorn, drained (corn mixed with sweet peppers)
3/4 cup grated cheddar cheese

Steps:

  • Fry the bacon in skillet until almost crisp, then drain off drippings.
  • Add the mushrooms, onion and saute until onions are tender.
  • Add the corn and heat through completely.
  • Turn heat to very low, sprinkle cheese on top, and heat until cheese is melted (do not stir).
  • The cheese will only take a couple of minutes to melt.

1 pkg bacon, 1/2 inch dice
1 medium onion, 1/4 inch dice (sweet is best)
1 red bell pepper, 1/4 in dice
4 can(s) whole kernel corn, drained
salt & pepper if desired, i just use pepper.
1 1/2 c cheddar cheese, shredded

Steps:

  • 1. In large saute pan, brown diced bacon until just crisp. Remove and drain on paper towels, set aside.
  • 2. Reserve about 3 tablespoons of bacon fat in pan and discard the rest. Add diced onion and red bell peppers to pan with bacon fat and cook over medium heat until onions just start to caramelize.
  • 3. Add drained corn and cook, stirring occasionally, for 15-20 minutes.
  • 4. If you are making to serve at later time or day, refridgerate at this point. Bacon and cheese should be added just before serving because the bacon will get soggy and the cheese will get hard.
  • 5. Add bacon, salt & pepper if desired, stir and cook until heated through. Cover with cheddar cheese, cover with lid, remove from heat.
  • 6. Best served as soon as cheese is melted.

Tips:

  • Use fresh corn on the cob whenever possible. Fresh corn has a sweeter, more flavorful taste than frozen or canned corn.
  • If you're using frozen corn, thaw it before cooking. This will help the corn cook evenly.
  • Don't overcook the corn. Overcooked corn will become tough and chewy.
