RASPBERRY CREAM CUPCAKES
I got this recipe from Giada De Laurentiis' show Everyday Italian. They are so easy to make, but very aesthetically pleasing as well. The whipped cream is a light and refreshing touch to the cupcake.

LEMON-RASPBERRY CUPCAKES
Fresh raspberries, paired with plenty of lemony flavor, make for an awesome summertime cupcake! This recipe makes a lot of frosting---plenty to generously frost 15 cupcakes and then some--but it freezes well, and would make a great sugar cookie topping too!

Tips:
- Use fresh raspberries for the best flavor. If fresh raspberries are not available, frozen raspberries can be used. Thaw them before using and drain off any excess liquid.
- To make the cupcakes extra moist, add 1/2 cup of sour cream or Greek yogurt to the batter.
- For a richer flavor, use brown sugar instead of granulated sugar in the cupcakes.
- Be careful not to overmix the batter. Overmixing can make the cupcakes tough.
- Fill the cupcake liners only 2/3 full. This will prevent the cupcakes from overflowing in the oven.
- Bake the cupcakes until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting them.
- For a smooth and creamy frosting, beat the butter and cream cheese together until light and fluffy. Then, gradually add the powdered sugar and vanilla extract.
- Decorate the cupcakes with fresh raspberries, chocolate chips, or sprinkles.
Conclusion:
Raspberry cream cupcakes are a delicious and easy-to-make treat. They are perfect for any occasion, from birthday parties to baby showers.
