Aunt Dorothy's Marinated Carrot Salad image

This has been a family favorite for years. The key to this recipe is not overcooking the carrots and allowing the entire salad to marinate for at least 12 hours. For a spectacular presentation when serving, garnish the top with rings of each color of bell pepper and rings of onion. Serve alone or over a bed of lettuce.

CARROT SALAD WITH PARSLEY AND SPRING ONIONS

Carrot Salad with Parsley and Spring Onions image

It is best to make this salad an hour ahead so the flavors come together.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Time 1h30m

Number Of Ingredients 7

1 pound carrots, cut into 2-inch-long matchsticks (4 cups)
1 cup thinly sliced spring onions or scallions (white and pale-green parts only)
1 cup fresh flat-leaf parsley leaves, roughly chopped
3 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
Coarse salt and freshly ground pepper
1/2 lemon

Steps:

  • Combine carrots, onions, and parsley in a large bowl; toss well.
  • Whisk together oil and vinegar, and season with salt and pepper. Let sit 1 hour.
  • Before serving, squeeze lemon over the top.

Tips:

  • Choose the right carrots and onions: For the best flavor and texture, select carrots that are firm and crisp, with bright orange color. Choose yellow or white onions, as they have a milder flavor than red onions.
  • Slice the carrots and onions thinly: This will help them absorb the dressing better and make them easier to eat.
  • Use a sharp knife: A sharp knife will make it easier to slice the carrots and onions thinly and evenly.
  • Don't overdress the salad: A little bit of dressing goes a long way. Too much dressing will overwhelm the flavor of the carrots and onions.
  • Serve the salad immediately: Carrot and onion salad is best served fresh. The longer it sits, the more the flavors will meld together and the salad will become less crisp.

Conclusion:

Carrot and onion salad is a simple but delicious side dish that can be enjoyed on its own or as part of a larger meal. It is a healthy and refreshing salad that is perfect for any occasion. With its crunchy texture and tangy dressing, carrot and onion salad is a surefire hit. So next time you are looking for a quick and easy salad to make, give this recipe a try. You won't be disappointed!
