SOUTHERN-STYLE GREEN BEANS RECIPE
Forty years ago, in an early collection of Southern Living vegetable recipes, the "Final Touches" chapter included clever twists on classic sauces and festive relishes along with novelties such as chive-blossom vinegar and tarragon-herb butter. In defense of the old-school recipes in the preceding chapters, we offered this introduction: "Southerners have never apologized for cooking their green beans 'to death,' but it is not widely known that properly motivated we can cook them as crunchy as the most sophisticated chef can and dress them in many ways, from herb-buttered to hollandaised to amandined. It is just that we may want to cook them half a day with salt pork or ham hocks if we are alone with the home folks; and that is a preference that bears no relationship to ignorance." As much we love all the new crunchy, barely blanched, paired-with-walnuts-and-feta green bean creations (and we truly do), there's still something so wonderful about the way a hambone broth infuses old-fashioned Southern-style green beans with a salty, meaty smokiness.

Steps:
- Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
- Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

My mother never just "opened a can" to make anything! She doctored everything to make it her own. These green beans are easy and even my husband eats them! Sometimes I add cut potatoes or turnips and let them simmer until soft.

Tips:
- Select tender green beans: Choose vibrant green beans that snap easily when bent. Avoid limp or yellowing beans.
- Trim the beans: Remove the tough ends of the green beans by snapping or cutting them off.
- Blanch the beans (optional): Blanching helps preserve the beans' color and crispness. To blanch, bring a large pot of water to a boil, add the green beans, and cook for 2-3 minutes. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
- Cook the bacon: Fry the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside.
- Sauté the onions and garlic: In the same skillet, sauté the onions and garlic in the bacon grease until softened and fragrant.
- Add the green beans: Add the green beans to the skillet with the onions and garlic. Stir to combine.
- Season the beans: Season the beans with salt, pepper, and any other desired seasonings, such as red pepper flakes or Cajun seasoning.
- Add the bacon and cook until heated through: Return the cooked bacon to the skillet and stir to combine. Continue cooking until the beans are heated through.
- Serve immediately: Southern-style green beans are best served hot. Enjoy them as a side dish with fried chicken, pork chops, or fish.
Conclusion:
Southern-style green beans are a classic Southern side dish that is easy to make and packed with flavor. With just a few simple ingredients and a little bit of time, you can create a delicious dish that will be a hit at your next gathering. Whether you serve them as a side dish or as a main course, these green beans are sure to please everyone at the table.
