1 *1 Wheel (2-pound) firm Brie (rind intact)
*chilled 2 pk (17 1/4-ounce) frozen *puff pastry sheets (4 pastry -sheets)
*thawed 1 lg egg, beaten lightly
CONSERVE:
2 *2T unsalted butter
4 *4 bartlet or bosc pears (peeled, cored and diced)
2 *2T brown sugar
*¼ cup dried cranberries
*¼ cup chopped walnuts
*¼ t allspice
*¼ t nutmeg

Steps:

  • To make the conserve: 1. Heat the butter in a heavy pan over medium heat until it begins to foam 2. Add the pears and cook stirring for 2 - 3 minutes, until the pear is tender 3. Stir in the brown sugar, dried cranberries, walnuts and spices 4. Continue cooking for 10 minutes, then set aside and cool to room temperature To make the brie: 1. Put Brie on a work surface and with a 2-inch round cutter cut out 10 rounds 2. On a lightly floured surface unfold 1 pastry sheet (do not roll out pastry) and with a 2 1/4-inch round cutter cut out 10 rounds 3. Unfold remaining 3 pastry sheets and with a 5-inch round cutter cut out 10 rounds 4. On cleaned work surface arrange 1 large pastry round and brush top with some egg. Center 1 cheese round on pastry and wrap pastry up over cheese to form a 3/4-inch border on top of cheese. Brush border with some remaining egg and top with 1 small pastry round, pressing edges of dough together gently but firmly to seal. Brush round with some remaining egg and chill on a baking sheet. Make more wrapped Brie with remaining pastry and cheese rounds in same manner. Chill each wrapped Brie, uncovered, at least 30 minutes 5. Preheat oven to 425 F. and lightly grease a baking sheet. 6. Bake Brie on baking sheet in middle of oven 15 minutes, or until puffed and golden. 7. Cool Brie on baking sheet on a rack about 10 minutes before serving. 1 tablespoon pomegranate preserves
¼ cup shredded mozzarella cheese
1 tablespoon honey
¼ cup pecan, chopped
¼ cup shredded pepper jack cheese
1 tablespoon dijon mustard
¼ cup shredded monterey jack cheese
3 oz prosciutto, sliced
1 large egg
1 tablespoon water
1 sheet puff pastry, thawed
all purpose flour, for dusting
baguette, sliced and toasted, for serving

Steps:

  • Arrange a rack in the lower third of the oven. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Arrange the Brie wheels on a cutting board. Spread the pomegranate preserves over 1 wheel of Brie. Sprinkle the shredded mozzarella over the jam.
  • Place another wheel of Brie on top of the mozzarella. Spread the honey over the Brie. Top with the pecans, then the shredded pepper Jack.
  • Place the last wheel of Brie on top of the pepper Jack. Spread the Dijon mustard on top of the Brie. Top with the shredded Monterey Jack.
  • Drape the prosciutto over the Brie so that all sides are covered and the prosciutto overlaps on the top.
  • In a small bowl, beat the egg and water together.
  • On a lightly floured surface, roll out the puff pastry to a 12 x 14-inch (30 x 35 cm) rectangle.
  • Place the Brie tower in the center of the puff pastry. Fold the corners of the puff pastry up to the center, brushing each layer with egg wash to secure. Brush the entire tower with egg wash. Cut a few slits in the top of the tower to allow steam to escape.

3 garlic cloves minced

  • With a sharp knife, cut a 'lid' from the top of the bread. Carefully remove insides, leaving a 1-inch crust. In a small bowl, mix butter with garlic.   • Preheat oven to 425 degrees Farenheit. Cut 1/4 of the top off of the bread loaf. Tear out the inside bread from the loaf. Tear into 1 inch pieces and set aside into a serving bowl.
