CLASSIC LATTICE TOP BLUEBERRY PIE RECIPE - (4.7/5)

Classic Lattice Top Blueberry Pie Recipe - (4.7/5) image

Provided by á-36

Number Of Ingredients 18

PIE CRUST:
12 ounces unbleached all-purpose flour, about 2 2/3 cups
3 tablespoons granulated sugar
1 teaspoon table salt
6 ounces cold unsalted butter, cut into 12 pieces, about 3/4 cup
2 ounces frozen vegetable shortening, cut into 4 pieces, about 4 tablespoons
5 tablespoons ice cold water
1 tablespoons fresh lemon juice
BLUEBERRY PIE FILLING:
2/3 cup granulated sugar
1 1/2 ounces unbleached all-purpose flour, about 1/3 cup
1 teaspoon finely grated lemon zest, plus 1 tablespoon
Juice from 1 medium lemon
Big pinch table salt
6 cups fresh blueberries, rinsed and thoroughly dried, about 30 ounces
FOR ASSEMBLY:
1 large egg
2 tablespoons coarse sugar, such as turbinado or Sugar in the Raw

Steps:

  • PIE CRUST: Put the flour, sugar, and salt in a food processor and pulse briefly to combine. Add the butter and shortening and pulse until the pieces are slightly larger than pea-size, 10 to 12 pulses. Drizzle the water and lemon juice evenly over the flour mixture. Pulse until the dough forms moist crumbs that just begin to clump together, 8 to 10 more pulses. If dough seems a bit sandy add tiny amounts of iced water until dough holds together more easily. Try not to over work. Dump the moist crumbs onto two large overlapping pieces of plastic wrap and gather into a pile. With the heel of your hand, push and gently smear the dough away from you, rotating the plastic so you smear a different section each time, until the crumbs come together; 2 or 3 smears should do it. Divide the dough in half (about 12 oz. for each piece); shape one piece into a 5-inch disk and the other into a 4x6-inch rectangle. Wrap each tightly in plastic and refrigerate until firm, at least 2 hours and up to 2 days (or freeze for up to 1 month). LATTICE TOP CRUST: Position a rack in the center of the oven and set a foil-lined heavy-duty rimmed baking sheet on the rack. Heat the oven to 425°F. Remove the rectangle of dough from the refrigerator; if it's very firm, let it sit at room temperature until it's pliable enough to roll, 10 to 20 minutes. (If the disk of dough is also very firm, let it sit at room temperature while you make the pre-formed lattice.) PRE-FORMED LATTICE: On lightly floured parchment, roll the dough with a floured rolling pin into a 9-1/2 x14-1/2-inch rectangle that's 1/8 inch thick. Roll from the center of the dough to the edges and try to use as few passes as possible to avoid overworking the dough. After every few passes, run an offset spatula or bench knife under the dough to be sure it isn't sticking, and give the dough a quarter turn. Reflour the parchment and the rolling pin only as needed-excess flour can make the crust tough. Using a fluted pastry wheel or a chef's knife, trim the dough into a 9x14-inch rectangle. With the wheel or knife, cut 12 strips of dough that are 14-inches long and 3/4-inch wide. If at any point while making the lattice the dough becomes too soft to work with, slide the parchment onto a cookie sheet and chill the dough until firm. Line a cookie sheet with parchment. Arrange 6 of the dough strips horizontally 3/4-inch apart; these will be the "bottom" strips. Fold back every other bottom strip to the left slightly more than halfway. Slightly left of center, lay down one "top" strip vertically over the bottom strips, dabbing the bottom strips with a wet finger where the top strip will overlap them. Dab the top strip where the folded strips will overlap it, then unfold the strips. Fold back the other 3 bottom strips to the left. Lay a second top strip 3/4-inch to the right of the first, dabbing with water as before. These are the two center strips. Unfold the bottom strips. Repeat the process on both sides with the remaining top strips of dough. Press gently where the strips overlap to seal. Loosely cover the lattice with plastic wrap and refrigerate on the cookie sheet while you roll out the bottom crust and make the filling. ROLL AND SHAPE THE BOTTOM CRUST: On lightly floured parchment, roll the disk of dough into a 14-1/2-inch circle that's 1/8 inch thick. Carefully and gently roll the dough around the rolling pin and position the pin over a 9-inch glass pie plate. Unroll, easing the dough into the pan. Gently press the dough against the side and bottom of the pan, being careful not to stretch or tear it, and allowing the excess dough to hang over the edges. Let sit at room temperature while assembling the filling. BLUEBERRY FILLING: In a large bowl, combine the sugar, flour, lemon zest and juice, and salt. Add 1 cup of the blueberries and crush them into the dry ingredients with a potato masher or fork to make a paste. Add the rest of the berries and toss to coat. Scrape the filling into the crust with a rubber spatula, spreading evenly. In a small bowl, beat the egg and 1 tablespoon water until blended. Using a small pastry brush, brush the egg mixture evenly over the lattice and edge, and then sprinkle generously with the coarse sugar. Put the pie on the heated baking sheet and reduce the oven temperature to 375°F. Bake until the edges are pale golden, about 30 minutes, then cover the edges with foil and continue to bake until the lattice is golden-brown and the filling is bubbling about 2-inches from the center, 80 to 90 minutes total. (If the lattice is golden-brown before the filling is bubbling, cover it loosely with foil.) Let the pie cool on a rack to room temperature, about 3 hours, before serving. It's best eaten on the day it's made, but you can make it up to 1 day ahead and store it, covered when cool, at room temperature. Leftovers keep in the refrigerator for up to 5 days.

OPEN-FACE BLUEBERRY PIE RECIPE - (4/5)

Open-face Blueberry Pie Recipe - (4/5) image

Provided by thatjerseygirl

Number Of Ingredients 9

1 Pillsbury pie crust
1 Tbs egg white, lightly beaten
4 cups blueberries, rinsed and dried
1/2 cup and 2 Tbs water, divided
2 Tbs cornstarch
1/2 cup sugar
2 tsp freshly squeezed lemon juice
1 tsp fine lemon zest
Pinch of salt

Steps:

  • Make the crust: Remove the dough from the refrigerator. If necessary, allow it to sit for about 10 minutes or until it is soft enough to roll. Roll the dough 1/8-inch thick or less and large enough to cut a 13-inch circle. Use an expandable flan ring or a cardboard template and a sharp knife as a guide to cut out the circle. Transfer the dough to the pie pan, fold under the excess, and crimp the border using a fork or your fingers. Cover it loosely and refrigerate it for a minimum of 1 hour and a maximum of 24 hours. Preheat the oven to 425-degrees at least 20 minutes before baking. Line the pastry with parchment, pleating it as necessary so it fits into the pan, and fill it with rice, dried beans or ceramic pastry beads. Bake for 20 minutes. Carefully lift out the rice, beans or beads with the parchment. With a fork, prick the bottom and sides, and bake 5 to 10 minutes, or until the crust is pale golden. Check after 3 minutes and prick any bubbles that may have formed. Cool the crust on a rack for 3 minutes, so it is no longer piping hot, then brush the bottom and sides with the egg white. Make the filling: Measure of 1 cup of berries, choosing the softest ones, if possible. Place them in a medium saucepan together with the 1/2 cup of water. Cover and bring to a boil. Meanwhile, in a small bowl or a sealable container, combine the cornstarch and the remaining 2 Tbs of water until well combined. Set aside. When the water and berries have come to a boil, lower the heat and simmer, stirring constantly for 3 to 4 minutes or until the berries start to burst and the juices begin to thicken. Mash the berries and, while stirring constantly, add the cornstarch mixture, the sugar, lemon juice, zest and salt. Simmer for a minute or until the mixture becomes translucent. Immediately remove from heat and stir in the remaining 3 cups of berries. Pour mixture into the baked pie shell and allow to sit at room temperature for at least 2 hours before serving. When set, the berries will remain very juicy but will not flow out of the crust.

BLUEBERRY CREAM CHEESE PIE RECIPE

Blueberry Cream Cheese Pie Recipe image

Provided by hchampoux

Number Of Ingredients 21

For the blueberry filling
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1/2 cup heavy whipping cream, whipped
1/3 cup flour depends on the juiciness of your berries, you can use up to half a cup
1 cup sugar
1/4 cup brown sugar
½ tsp cinnamon
½ tsp nutmeg
6 cups fresh blueberries thaw to room temp if using frozen berries
1 tsp finely chopped lemon zest
4 tbsp lemon juice
3 tbsp butter
For the pastry
1/2 cup very cold vegetable shortening cut in small cubes
1/2 cup very cold butter cut in small cubes
2 ½ cups flour
2 tbsp brown sugar
½ tsp salt
1/4 to1/3 cup ice water Only enough to make a dough form.
1 tsp vanilla extract

Steps:

  • It is best to start with making your filling because it has to be cooled to room temperature before being used to fill the pie. For the Blueberry Filling In a small bowl, beat cream cheese and confectioners' sugar until smooth. Fold in whipped cream. Spread into pie shell. Whisk together the flour, sugar, brown sugar, cinnamon and nutmeg. In a large saucepan, bring the blueberries, lemon zest and lemon juice to a gentle boil. Stirring constantly, gently stir in the flour, sugar and spice mixture. Cook for only a minute after the last of the dry mixture has been stirred in. Your filling should now have thickened. Remove from heat and stir in the 3 tbsp butter. Cool the filling to room temperature before adding to the pie crust. This is very important or your bottom pie crust will be soggy. Pour into prepared pie crust. Top with the second pastry round, tucking the edges of the dough under the bottom crust and flute the edges together using your fingers or a fork. Brush with egg wash made by whisking together 1 large egg yolk & 1 to 2 tbsp water Lightly sprinkle sugar over the top of the egg washed pie if you like. Turbinado sugar works well for this. Slit a 1 inch hole in the middle of the top crust to allow steam to escape. If you prefer to make a lattice crust on top, roll the second dough round into a 12 inch square-ish shape and cut that into 8 equal strips for the lattice crust top. Place the pastry strips on top of the blueberry mixture, interweaving them to form a simple lattice pattern. Tuck the ends of the strips under the edge of the bottom crust and crimp with a fork or your fingers to seal the pastry together. Brush the edges of the crust and the lattice top with an egg wash. Chill the pie in the fridge for 20-30 minutes. This will help make a flaky crust. Place the pie on a cookie sheet to catch any dripping filling as it bakes. Bake at 400 degrees F for about 20 minutes, then reduce heat to 350 degrees F or until filling bubbles and thickens, about 45 minutes to an hour. If the crust begins to get too dark around the sides, cover the edges with strips of aluminum foil and continue baking until the rest of the pie is completely baked. Cool completely before serving. To prepare the pastry Using a food processor or a pastry blender cut cold shortening and butter into flour, brown sugar and salt until mixture resembles a coarse meal. Small pieces of shortening and butter should still be visible. Pour vanilla into cold water then pour over the mixture and work in by tossing with a fork until dough begins to form. Use your hands as little as possible and work the dough as little as possible. Divide dough into 2 balls, flatten into 2 rounds, wrap in plastic wrap and place in the refrigerator to rest for a minimum of 20 - 30 minutes. You can make your dough the previous day but make sure you take it out of the fridge for 10 minutes to warm slightly before rolling out. Roll the dough into a 12 inch round and place in the bottom of a 10 inch pie plate. Push the dough well into the pan to make sure that it is not stretched at all. This is important to make sure your dough does not contract during the baking time. Trim the dough to edge of plate by running a sharp knife around the edge. Roll the remaining dough round into a 12 inch round and reserve for the top of the pie.

Number Of Ingredients 22

ALMOND-BROWN SUGAR CRUST:
1 1/2 cups almonds, slivered
2 tablespoons light brown sugar, packed
1/2 teaspoon kosher salt
3 tablespoons unsalted butter, melted
BLUEBERRY SAUCE:
3 cups blueberries, rinsed, well drained, and carefully picked over for damaged berries
1/3 cup granulated sugar
1 teaspoon cornstarch
1/4 teaspoon kosher salt
1 teaspoon grated lemon zest
2 teaspoons freshly squeezed lemon juice
A few gratings of nutmeg (about 1/8 teaspoon)
1 tablespoon water
ASSEMBLE AND SERVE:
1 quart homemade or purchased vanilla ice cream
3/4 cup of the Blueberry Sauce, chilled
1/2 cup creme fraiche or sour cream
1/2 cup heavy cream
1 tablespoon sugar
2 cups fresh blueberries, rinsed, picked over, and well dried on paper towel-lined baking sheets
Remaining Blueberry Sauce, heated

Steps:

  • Preheat oven to 350°F. In bowl of food processor fitted with a steel blade combine almonds, brown sugar, and salt. Pulse until coarsely ground. Transfer to bowl and stir in melted butter. Turn into 9-inch pie plate. With fingers press onto bottom and sides to form a firm, even layer. Bake 8 to 12 minutes until lightly golden. Don't over brown or the crust will have an overpowering flavor. Allow to completely cool on a rack. Transfer to freezer until ready to use. (May be made up to a week in advance and frozen, tightly wrapped.) In large, wide, nonreactive skillet combine blueberries, sugar, cornstarch, and salt, stirring well with a spoon to distribute the sugar and cornstarch. Add zest, lemon juice, water, and a few gratings of fresh nutmeg; stir again to blend. Cook and stir over medium heat until blueberries begin to pop, give off juice, and come to a full simmer. Simmer, stirring gently for 1 additional minute until sauce is lightly thickened and cornstarch is well cooked. Set aside to cool; refrigerate sauce until completely chilled before proceeding. "Otherwise you'll wind up with a blueberry milk shake," Scott says. Transfer ice cream to a mixing bowl and let stand in the refrigerator 30 minutes or until just softened. Spoon half into prepared crust. Spread in even layer and top with the chilled blueberry sauce. Spoon on remaining ice cream and spread to edges. Cover surface of ice cream with plastic wrap and freeze at least 8 hours or overnight until firmly set. To serve: 1. In chilled mixing bowl, whisk creme fraiche, heavy cream, and sugar until just thickened to spreading consistency. Do not over beat. Spread cream mixture over pie; top with blueberries. Serve with heated sauce on the side.

ROSE LEVY BERANBAUM'S FRESH BLUEBERRY PIE RECIPE - (4.4/5)

Rose Levy Beranbaum's Fresh Blueberry Pie Recipe - (4.4/5) image

Provided by kelsa94

Number Of Ingredients 16

PIE CRUST:
8 tablespoons unsalted butter, cold
1 1/3 cups plus 4 tablespoons pastry flour bleached all-purpose flour
1/4 teaspoon salt
2 1/2 to 3 1/2 tablespoons ice water
1 1/2 teaspoons cider vinegar
1/8 teaspoon non-aluminum baking powder (if not using, double the salt)
BLUEBERRY FILLING:
1 tablespoon egg white, lightly beaten
4 cups blueberries, rinsed and dried
1/2 cup plus 2 tablespoons water, divided
2 tablespoons cornstarch
1/2 cup sugar
2 teaspoons lemon juice
Pinch of salt
1 1/2 cups whipped cream (optional)

Steps:

  • PIE CRUST: Divide the butter into two parts, about two thirds to one third (5 tablespoons and 3 tablespoons). Cut the butter into 3/4-inch cubes. Wrap each portion of butter with plastic wrap, refrigerate the larger amount and freeze the smaller for at least 30 minutes. Place the flour, salt, and baking powder in a reclosable gallon-size freezer bag and freeze for at least 30 minutes. Place a medium mixing bowl in the freezer to chill. Place the flour, salt, and optional baking powder in another medium bowl and whisk to combine them. Use a pastry cutter or rub the mixture between your fingers to blend the larger portion of the butter into the flour until it resembles coarse meal. Spoon the mixture, together with the cold butter from the freezer, into a reclosable gallon-size freezer bag. Expel any air from the bag and close it. Use a rolling pin to flatten the butter into flakes. Place the bag in the freezer for at least 10 minutes or until the butter is very firm. Transfer the mixture to the chilled bowl, scraping the sides of the bag. Set the bag aside. Sprinkle the ice water and vinegar onto the mixture, tossing it lightly with a rubber spatula. Spoon the loose mixture back into the plastic bag. Holding both ends of the bag opening with your fingers, knead the mixture by alternately pressing it, from the outside of the bag, with knuckles and heels of your hands until the mixture holds together in one piece and feels slightly stretchy when pulled. Wrap the dough with plastic wrap, flatten it into a disc and refrigerate for at least 45 minutes, preferably overnight. This dough can be stored, refrigerated, up to 2 days; frozen, up to 3 months. CRUST: Remove the dough from the refrigerator. If necessary, allow it to sit for about 10 minutes or until it is soft enough to roll. Using a pastry cloth and sleeve rubbed with flour or two sheets of plastic wrap lightly sprinkled with flour, roll the dough 1/8 inch thick or less and large enough to cut a 13-inch circle. Use an expandable flan ring or a cardboard template and a sharp knife as a guide to cut out the circle. Transfer the dough to the pie pan, fold under the excess, and crimp the border using a fork or your fingers (or just fold it under). Cover it loosely and refrigerate it for a minimum of 1 hour and a maximum of 24 hours. Preheat the oven to 425°F at least 20 minutes before baking. Line the pastry with parchment, pleating it as necessary so it fits into the pan, and fill it with rice or dried beans. Bake for 20 minutes. Carefully lift out the rice or beans with the parchment. With a fork, prick the bottom and sides, and bake 5-10 minutes, or until the crust is pale golden. Check after 3 minutes and prick any bubbles that may have formed. Cool the crust on a rack for 3 minutes, so it is no longer piping hot, then brush the bottom and sides with the egg white -- this will help keep the bottom crust from getting soggy FILLING: Measure out 1 cup of the blueberries, choosing the softest ones. Place them in a medium saucepan together with the 1/2 cup water. Cover and bring them to a boil. Meanwhile, in a small bowl, whisk together the cornstarch and the remaining 2 tablespoons of water. Set it aside. When the water and blueberries have come to a boil, lower the heat and simmer, stirring constantly for 3 to 4 minutes or until the blueberries start to burst and the juices begin to thicken. Stirring constantly, add the cornstarch mixture, the sugar, lemon juice, and salt. Simmer for a minute or until the mixture becomes translucent. Immediately remove it from the heat and quickly fold in the remaining 3 cups of blueberries. Spoon the mixture into the baked pie shell and allow to sit at room temperature for at least 2 hours before serving. When set, the berries will remain very juicy but will not flow out of the crust. Serve with whipped cream if desired. This pie can be stored at room temperature for up to 2 days.
