1 tsp gumbo file powder
1/4 tsp ground chile pepper
4 cans chicken broth
1 Tblsp light brown sugar
1 bay leaf
8 oz raw shrimp peeled and deveined

Steps:

  • 1) Melt butter in a large heavy pot. Add flour; stir until blended. Cook over medium-low heat, stirring constantly, 6-8 minutes until golden brown. 2) Add onion, pepper and celery. Cook, stirring occasionally, about 8 minutes until vegetables are soft. 3) Stir in sausage, ham, Emeril's seasoning, paprika, and file powder and ground chile. Cook about 2 minutes. 4) Add broth and stir until well combined. Add brown sugar and bay leaf; bring to boil. Reduce heat and simmer uncovered, 20 minutes for flavors to blend. 1/4 cup canola oil
1 (8-ounce) package smoked sausage
2 pounds chicken thighs, skinless
1/2 cup flour
1/4 cup unsalted butter
1 medium green bell pepper, diced
1 medium onion diced
1 cup celery, chopped, about 3 stalks
2 teaspoons garlic, minced
1 (14-ounce) can tomatoes, chopped
1/2 pound crab legs
1 tablespoon Creole seasoning.
1/2 tablespoon smoked paprika
1 tablespoon chicken bouillon powder or 1 cube
1 tablespoon thyme, fresh or dried
2 bay leaves
6 cups chicken stock
1 pound shrimp, 41/50 count, peeled and deveined
1/4 cup parsley, chopped
2 green onions, chopped
1 tablespoon gumbo file
10 cups rice, cooked

  • Lightly season the chicken with salt and pepper. Heat the oil over medium heat in a heavy bottomed Dutch oven. Cook the chicken until browned on both sides and remove. Followed by can tomatoes about 6 cups of chicken stock, bring to a boil and let it simmer for about 45 to 50 minutes .Add the shrimp, simmer for 5 more minutes. Stir in file powder, green onions, and chopped parsley. Adjust thickness of soup and flavor with broth or water and salt to your taste.

1/4 pound bacon, chopped
2 cups okra, chopped
1 (14.5 ounce) can diced tomatoes with green chile peppers
1/2 cup unsalted butter
2/3 cup all-purpose flour
2 cups onion, chopped
1/2 cup green onions, chopped
2/3 cup green bell pepper, finely chopped
2/3 cup celery, finely chopped
2 tablespoons fresh parsley, chopped
2 tablespoons garlic, minced
2/3 cup flour
8 cups water, divided
Salt to taste
Ground black pepper to taste
1/4 teaspoon cayenne pepper
1 teaspoon dried thyme
2 bay leaves
6 cups water
2 pounds uncooked medium shrimp, peeled and deveined

Raise the heat to medium; stir in salt, pepper, cayenne pepper, thyme, and bay leaves, bring the mixture to a boil, and stir in the sausage, bacon, okra-tomato mixture, and 6 more cups of water. Reduce heat to medium-low, and simmer the gumbo, stirring occasionally, until the soup has thickened and the flavors are blended, about 45 minutes. Stir in the shrimp, and simmer until they turn pink and opaque, 6 to 8 more minutes. Discard bay leaves and adjust the seasonings, if desired, before serving.
