RED BEAN SOUP WITH ANDOUILLE SAUSAGE (CROCK POT)

Red Bean Soup With Andouille Sausage (Crock Pot) image

Posting this for ZWT 2006 (French, Cajun & Creole region). I absolutely love red beans & rice though I make it my own weird way and when I found this recipe, I had to try it. I played with the spices some as it was rather bland the original way. I serve this kind of gumbo style with a scoop of cooked rice put into the bowls before I add the soup.

Tips: Achieving the Perfect Red Bean Soup with Andouille Sausage

  • Selecting Quality Ingredients: Opt for dried red beans that are free from blemishes and have a consistent color. Use a flavorful andouille sausage with a spicy kick to enhance the soup's taste.
  • Soaking the Beans: Soaking the beans overnight or for at least 8 hours helps reduce cooking time and eliminates the need for a long simmering process.
  • Sautéing Aromatics: Sautéing the onion, celery, and bell pepper in butter or oil adds depth of flavor to the soup. This step helps release the vegetables' natural sweetness and enhances the overall taste of the dish.
  • Simmering the Soup: Simmer the soup for at least 30 minutes to allow the flavors to meld and develop. Longer simmering time results in a richer and more flavorful soup.
  • Adding the Sausage: Add the sliced andouille sausage during the last 15 minutes of cooking to prevent it from becoming tough. This ensures the sausage retains its texture and spicy flavor.
  • Seasoning to Taste: Adjust the seasonings according to your preference. Add additional salt, pepper, or cayenne pepper to achieve the desired level of spiciness.
  • Garnish and Serve: Garnish the soup with chopped green onions, parsley, or a dollop of sour cream before serving. Serve with crusty bread or cornbread for a complete and satisfying meal.
