NEW POTATO SALAD

New Potato Salad image

Provided by Ina Garten

Categories     side-dish

Time 4h

Number Of Ingredients 10

3 pounds small red potatoes
Kosher salt
1 cup good mayonnaise
1/4 cup buttermilk, milk, or white wine
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
Freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped red onion

Steps:

  • Place the potatoes and 2 tablespoons of salt in a large pot of water. Bring the water to a boil, then lower the heat and simmer for 10 to 15 minutes, until the potatoes are barely tender when pierced with a knife. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean, dry kitchen towel. Allow the potatoes to steam for 15 to 20 minutes. Meanwhile, in a small bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole-grain mustard, dill, 1 teaspoon of salt, and 1 teaspoon of pepper. Set aside. When the potatoes are cool enough to handle, cut them into quarters or halves, depending on their size. Place the cut potatoes in a large bowl. While the potatoes are still warm, pour enough dressing over them to moisten. (As the salad sits, you may need to add more dressing.) Add the celery and red onion, 2 teaspoons of salt and 1 teaspoon of pepper. Toss well, cover, and refrigerate for a few hours to allow the flavors to blend. Serve cold or at room temperature.

POTATO SALAD

Provided by Robert Irvine : Food Network

Categories     side-dish

Time 38m

Yield 4 to 6 servings

Number Of Ingredients 10

2 pounds small red potatoes scrubbed and quartered
1 pound bacon, chopped
2 tablespoons red wine vinegar
3/4 cup mayonnaise
3 tablespoons whole-grain mustard
6 scallions, chopped in 1/4-inch segments
1 red onion, diced
2 tablespoons sugar
Salt and pepper
2 hard boiled eggs, chopped

Steps:

  • Place potatoes in cold water in a medium saucepan. Bring to a boil and turn down the heat to medium, letting them cook until fork tender, about 15 minutes. In a skillet, saute bacon on low heat until crispy. Place bacon on a paper towel and discard the grease. Drain the potatoes, but DO NOT rinse them under cold water. Rather let them cool for about 6 to 8 minutes on a sheet pan. In a small bowl combine vinegar, mayonnaise, mustard, scallions, onion, sugar, and salt and pepper. Transfer potatoes to a mixing bowl and sprinkle bacon and hard boiled eggs over them. Then fold mayonnaise mixture into the potatoes and serve at room temperature.

Tips:

  • Choose the Right Potatoes: For a classic potato salad, Yukon Gold or red potatoes are excellent options as they hold their shape well and have a creamy texture.
  • Cook the Potatoes Perfectly: Boil the potatoes until they are tender but still firm. Overcooked potatoes will become mushy and fall apart in the salad.
  • Cool the Potatoes Completely: Before adding the dressing, let the potatoes cool completely. This will prevent the dressing from becoming too thin and watery.
  • Use Fresh Ingredients: Fresh herbs, vegetables, and spices make all the difference in potato salad. Use the best quality ingredients you can find for the most flavorful results.
  • Don't Overdress the Salad: A little dressing goes a long way. Add just enough dressing to coat the potatoes and vegetables without making the salad too heavy.
  • Chill Before Serving: Potato salad is best served chilled. Refrigerate it for at least an hour before serving for the best flavor and texture.

Conclusion:

With its creamy texture, tangy dressing, and colorful vegetables, potato salad is a classic side dish that is perfect for any occasion. Whether you prefer a classic recipe or something with a twist, there are endless variations to suit every taste. So next time you are looking for a simple but delicious side dish, give one of these potato salad recipes a try. You won't be disappointed!
