Tips:

  • Soak the corn tortillas in hot water for a few minutes before filling them. This will make them pliable and less likely to crack.
  • Be careful not to overfill the tortillas. If they are too full, they will be difficult to roll up and may fall apart.
  • Place the seam side of the tortillas down in the baking dish. This will help to keep them from unrolling.
  • Cover the enchiladas with foil before baking. This will help to keep them moist.
  • Garnish the enchiladas with your favorite toppings before serving. Some popular options include sour cream, guacamole, and salsa.

Conclusion:

Refried bean and cheese enchiladas are a delicious and easy-to-make meal that can be enjoyed by people of all ages. They are perfect for a weeknight dinner or a potluck. With a few simple tips, you can make sure that your enchiladas turn out perfectly every time.
