1 box strawberry cake mix
1 ⅓ cups water
3 eggs
⅓ cup vegetable oil
2 (10 ounce) packages frozen strawberries
1 (3.5 ounce) package instant vanilla pudding mix
1 cup milk
2 cups frozen whipped topping, thawed
1 pint fresh strawberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
  • Prepare cake mix as directed on package. Pour batter into prepared pan and bake until a tester inserted in the center comes out clean, about 30 minutes. Allow cake to cool on wire rack.
  • Poke holes on top of cake. Puree thawed strawberries with juice in a blender or food processor and spoon over top of baked cake.
  • To Make Topping: Prepare pudding mix as directed on package using one cup of milk. Fold whipped topping into pudding mixture and spread over cake. Arrange strawberries on top of cake, if desired.

¼ cup granulated sugar
1 teaspoon vanilla extract
nonstick cooking spray, for greasing
3 cups all purpose flour
2 teaspoons kosher salt
2 teaspoons baking soda
4 sticks unsalted butter, room temperature
1 cup granulated sugar
½ cup light brown sugar
4 large eggs
3 teaspoons vanilla extract
1 cup buttermilk
5 ½ cups powdered sugar
4 sticks unsalted butter, room temperature
2 teaspoons vanilla extract
3 tablespoons heavy cream

Steps:

  • Make the strawberry purée: Preheat the oven to 400°F (200°C).
  • Spread the strawberries on a baking sheet and toss with the sugar until well coated.
  • Roast the strawberries for about 25 minutes, or until very fragrant and bright red in color.
  • Transfer the roasted strawberries to a blender and purée for 1-2 minutes, or until very smooth.

Add the remaining buttermilk and dry ingredients and beat to incorporate. Scrape down the sides of the bowl. Add the vanilla, then mix on medium speed for 2 minutes.
  • Divide the batter evenly between the prepared pans. Bake the cakes for 30-32 minutes, or until a toothpick inserted in the center comes out clean. Remove the cakes from the oven and let cool slightly, then remove from the pans and let cool completely on a wire rack.
  • Make the frosting: In a large bowl, combine the powdered sugar and butter. Beat with an electric hand mixer on medium-high speed for 1 minute, until fluffy. Add the vanilla and heavy cream and beat for 1 minute more, until smooth. The frosting will keep in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before frosting the cake.
  • To frost the cake, set one layer on a cake stand lined with strips of parchment paper. Spread about 1½ cups (260 G) of frosting evenly over the cake. Top with the remaining cake layer and evenly frost the top and sides with a thick layer of frosting. Decorate the cake with fresh strawberries.

1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)

1 (4 ounce) package vanilla instant pudding mix
1 cup milk
2 cups Cool Whip, thawed
fresh strawberries, sliced and fanned

Steps:

  • Preheat oven to 350 degrees.

2 (10 ounce) boxes frozen strawberries in syrup
1 cup of cold milk
1 (3 1/2 ounce) box instant vanilla pudding
1 (8 ounce) container Cool Whip, thawed
1 pint fresh strawberries (tops removed and strawberries cut in half)
1/3 cup chopped pecans (totally optional, but you'll be glad you did)

Steps:

  • Make the boxed cake mix according to the directions on the back, pour batter in a 9x13 inch pan and bake according to box instructions.
  • When baked, remove from the oven and let it cool completely.
  • Once it is cool, use the handle of a wooden spoon to poke rows and rows of holes in the cake.
  • Add the thawed strawberries with syrup into a food processor or blender. Pulse until it is a slushy consistency.
  • Pour the strawberry puree mixture over the cake and spread it out evenly. Let it soak inches.
  • While the strawberry puree is soaking in, put 1 cup of cold milk and the instant vanilla pudding mix into a bowl and mix until it thickens. The box of instant pudding says to use 2 cups of milk, but we are only using 1 cup.

⅓ cup water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.

½ cup plus 1 Tbsp. plus ½ tsp. (115 g) granulated sugar
¼ cup plus ¾ Tbsp. (45 g) cornstarch
1¾ cups plus 2 Tbsp. whole milk
1 stick plus 3 Tbsp. (150 g) unsalted butter, room temperature
½ cup plus 2 ½ Tbsp. (65 g) all-purpose flour
7 large egg yolks
¾ cup plus 2 Tbsp. plus 1 ¼ tsp. (180 g) granulated sugar, divided
4 large egg whites
1⅛ lb (500 g) fresh whole strawberries

Steps:

  • In a medium bowl, vigorously whisk together the egg yolks and sugar until lightened. Whisk in the cornstarch. In a saucepan, warm the milk, then slowly pour it into the egg mixture while whisking constantly. Pour the combined mixture back into the saucepan and cook over medium heat, whisking constantly, until very thick, about 5 minutes. Cover the surface with plastic wrap and refrigerate.
  • Preheat the oven to 350°F. Line a rimmed sheet pan with parchment paper.

  • Cover the strawberries with a little of the pastry cream to seal them against the ring.
  • Hull the remaining ones and place in the center of the cake.
  • Cover the layer of strawberries with some of the pastry cream.
  • Place the second cake disk on top.
  • Evenly spread a thin layer of the pastry cream on top.
  • Hull the remaining whole strawberries then set them on top of the cake, pointed ends up.
  • Scrape the remaining pastry cream into a pastry bag fitted with a 1/3-in plain pastry tube and pipe pointed mounds of cream on top of the cake between the strawberries.
  • Refrigerate overnight. Just before serving, carefully remove the ring.

  • For the best results, use fresh, ripe strawberries. Avoid strawberries that are bruised or have any signs of mold.
  • If you don't have a springform pan, you can use a 9-inch round cake pan. Just be sure to grease and flour the pan before adding the batter.
