5 cups uncooked egg noodles
2 cans (14 ounces each) sauerkraut, rinsed and well drained
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
3/4 cup whole milk
1/2 cup chopped onion
3 tablespoons prepared mustard
3/4 pound sliced deli corned beef, chopped
2 cups shredded Swiss cheese
2 slices day-old light rye bread
2 tablespoons butter, melted

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large bowl, combine the sauerkraut, soup, milk, onion and mustard. , Drain noodles; stir into sauerkraut mixture. 2/3 cup condensed cream of mushroom soup, undiluted
1/3 cup 2% milk

1/3 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1/2 cup shredded Swiss cheese
3 tablespoons soft whole wheat bread crumbs

I also prefer brown deli mustard over other varieties. Pair this casserole with a salad of mixed greens, and you've got one tasty meal!

8 ounces egg noodles, uncooked
8 ounces corned beef (see directions)
1 (16 ounce) bag sauerkraut, drained
2 teaspoons caraway seeds
8 ounces swiss cheese, shredded
1/2 cup thousand island dressing
1/2 cup milk
1 tablespoon mustard
2 slices pumpernickel bread
1 tablespoon butter

Steps:

  • Preheat the oven to 350F, and spray a 13x9-in. baking dish with non-stick cooking spray. Cook the noodles according to the directions on the package and drain.
  • If using deli corned beef, cut it into bite-sized pieces. If using leftover brisket, shred. Mix the corned beef, noodles, sauerkraut, caraway seeds, and Swiss cheese in a bowl and pour into the baking dish.

1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of celery soup
1 1/3 cups milk
1 medium onion, chopped,sauteed or microwaved til tender
3 tablespoons spicy brown mustard
1/4 cup brown sugar
1 teaspoon caraway seed
2 (16 ounce) cans sauerkraut, drained
1 (8 ounce) package medium egg noodles, cooked, drained
1 (3 lb) corned beef brisket, cooked,diced or cubed
8 ounces swiss cheese, shredded
3 -4 cups rye bread, cubed, tossed in
4 tablespoons melted butter, lightly toasted in oven on cookie sheet (however much you have on hand works just fine)

Steps:

  • Cook corned beef, cube, set aside.
