Steps:
- Preheat the oven to 375°F. In a large heavy pot, combine the potatoes, sugar, water, orange juice, vanilla beans, orange zest, cinnamon, and salt. Bring to a simmer over high heat. Lower the heat, cover and simmer, stirring occasionally, until the potatoes are tender, about 20 minutes. Strain the potatoes out of the sauce and place in a casserole dish. Return the sauce to the pan. Add the bourbon to the sauce and continue to cook until syrup is thickened, about another 15 minutes**. **I have found that I need to reduce the sauce for closer to 30 minutes, on medium-high heat. Pour the syrup over the potatoes and place in the oven. Bake until the potatoes are browned, about 10 to 15 minutes. Remove from the heat and add the butter, stirring gently to incorporate. Serve immediately.

CANDIED SWEET POTATOES
When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.

CANDIED SWEET POTATOES OR YAMS RECIPE - (4.5/5)
Provided by wpolumbo

Steps:
- Boil the potatoes or yams until tender; drain. Peel and cut in half lengthwise. Put the butter and sugar in a heavy skillet and heat, stirring occasionally, until melted. Add the potatoes or yams and turn until lightly browned. Add 1/4 cup water, cover, and simmer over low heat for about 10-15 minutes. After the butter and sugar have melted, put the potatoes in a buttered baking dish, pour the butter-sugar mixture on top, cover, and bake in a preheated 350°F (180°C) oven for 45 minutes to 1 hour.
Tips:
- Choose the right sweet potatoes: Look for firm, smooth-skinned sweet potatoes that are about the same size. Avoid any that are bruised or have blemishes.
- Pierce the potatoes: Before baking, use a fork to pierce the potatoes several times. This will help them cook evenly.
- Bake the potatoes: Bake the potatoes at 400°F for about an hour, or until they are tender. You can check for doneness by inserting a knife into the center of a potato. If it goes in easily, the potato is done.
- Make the syrup: While the potatoes are baking, make the syrup. In a saucepan, combine the brown sugar, butter, maple syrup, and spices. Bring to a boil over medium heat, then reduce heat and simmer for 5 minutes, or until the syrup has thickened.
- Glaze the potatoes: Once the potatoes are baked, remove them from the oven and brush them with the syrup. Return the potatoes to the oven and bake for an additional 10 minutes, or until the syrup is bubbly and caramelized.
- Serve warm: Serve the potatoes warm, topped with chopped pecans or walnuts, if desired.
Conclusion:
These candied sweet potatoes are a delicious and easy side dish that is perfect for any occasion. They are sweet, savory, and slightly spicy, and they are sure to be a hit with everyone at your table. So next time you're looking for a new way to prepare sweet potatoes, give this recipe a try.
