1/2 lb fresh rhubarb stalks, cut into 1/2-inch pieces (10 cups)
2 1/2 cups cold water
1 3/4 cups sugar
3 tablespoons coarsely chopped peeled fresh ginger
About 2 cups sparkling water

Tips:

  • Choose fresh, firm rhubarb stalks with minimal blemishes for the best flavor and texture.
  • Trim the ends of the rhubarb stalks and remove any leaves, as they can be bitter.
  • Cut the rhubarb into small pieces to make it easier to blend or mix into your recipe.
  • Rhubarb can be used in both sweet and savory dishes, so experiment with different flavor combinations to find what you like best.
  • Rhubarb pairs well with other fruits, such as strawberries, raspberries, and blueberries, as well as herbs like mint and basil.
