1 (15 ounce) package refrigerated pie crusts
1 ⅓ cups white sugar
⅓ cup all-purpose flour
½ teaspoon grated orange zest
⅛ teaspoon salt
3 cups chopped rhubarb
1 cup drained crushed pineapple
2 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Press one of the pie crusts into the bottom and up the sides of a 9 inch pie plate. Refrigerate the other crust until needed.
  • In a medium bowl, stir together the sugar, flour, orange zest and salt. Combine the rhubarb and pineapple; stir into the dry ingredients until evenly blended. Pour into the prepared pie crust. Place the remaining crust on top and crimp the edges to seal in the filling. Cut a few holes in the top pastry to vent steam.

Steps:

1 1/4 cups sugar
1/4 cup all-purpose flour
3 1/4 cups thinly sliced rhubarb
14 ounces crushed drained pineapple
pastry for double-crust pie
1/2 teaspoon granulated sugar

Steps:

  • In large bowl measure 1st amount of sugar and flour, stir.
  • Add rhubarb and pineapple, stir.
  • Pour fruit mixture into unbaked pie shell.
  • Moisten pastry rim and cover with top crust.

4 cups rhubarb, chopped
2 tablespoons cornstarch
1/2 cup sugar
1/2 cup Splenda granular
2 (8 ounce) cans crushed pineapple, drained
1/2 cup brown sugar
1/4 cup Splenda granular
1/2 cup flour
1/4 cup old fashioned oats
3 tablespoons butter, cold

Steps:

  • Preheat oven to 350.
  • Combine rhubarb and cornstarch, set aside.

This is a nice change for a pie. I don't remember where I got the recipe, but I've been making it for years. It is a request for Easter Sunday lunch from my family.

1 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon salt
1 (20 ounce) can crushed pineapple, DO NOT DRAIN
1 (8 ounce) carton sour cream
1 tablespoon lemon juice
2 large eggs, separated
1 (9 inch) pastry shells, baked
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract
1/4 cup sugar

Steps:

  • In a medium saucepan, combine the sugar, flour, salt, pineapple, sour cream and lemon juice.
  • Cook over medium heat,stirring occasionally, until thick.
  • In a small bowl, beat egg yolks until thick.
  • Temper the egg yolks by adding about 1/2 of the hot mixture in with the yolks, stirring well, then adding the mixture of yolks back in to your original mixture.
