Time 1h

Number Of Ingredients 15

3 tablespoons extra-virgin olive oil
1 large onion, chopped
4 large cloves garlic, minced
1 tablespoon ground cumin
1 teaspoon salt
2 bay leaves
¼ teaspoon ground pepper
¼ teaspoon crushed red pepper
¾ cup long-grain brown rice
3 ¾ cups water
¾ cup brown or green lentils
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 tablespoon sherry vinegar
Sliced scallions for garnish
Chopped cilantro for garnish

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion and cook, stirring, until starting to brown, 3 to 4 minutes. Add garlic, cumin, salt, bay leaves, pepper and crushed red pepper; cook, stirring, until fragrant, about 1 minute. Add rice and stir to coat. Add water and bring to a boil. Reduce heat, cover and cook for 15 minutes. Add lentils, cover and cook until the rice and lentils are tender and most of the water is absorbed, 15 to 20 minutes more.
  • Remove from heat and gently stir in spinach. Place a clean dish towel over the saucepan and replace the lid. Let stand for 10 minutes (the towel will absorb the steam). Stir in vinegar and remove bay leaves before serving. Garnish with scallions and cilantro, if desired.

BUTTERED SPINACH AND RICE

Buttered Spinach and Rice image

This is an interesting variation on the basic rice side dish from Taste of the Caribbean by Rosamund Grant. It is tasty all on its own, but unassuming enough to serve with a spicier dish to top it off. Note: The original recipe called for 2 1/2 cups basmati rice with 2 1/2 cups of water - I used that same amount of water with just a little over 1 cup of regular long grain rice and it was just right. Collard greens could also be used in place of the spinach.

Tips:

  • Fresh is best: Use fresh spinach for the best flavor and texture. If you don't have fresh spinach on hand, frozen spinach can be substituted, but be sure to thaw it completely before using.
  • Don't overcook the spinach: Spinach cooks very quickly, so be careful not to overcook it. Overcooked spinach will become limp and lose its vibrant green color.
  • Season to taste: Rice with spinach is a versatile dish that can be seasoned to your liking. Add salt, pepper, garlic, onion, or other herbs and spices to taste.
  • Serve immediately: Rice with spinach is best served immediately after cooking. Leftovers can be stored in the refrigerator for up to 3 days.

Conclusion:

Rice with spinach is a healthy, delicious, and easy-to-make dish that can be enjoyed for breakfast, lunch, or dinner. It's a great way to get your daily dose of vegetables, and it's also a good source of fiber, iron, and vitamins A, C, and K.
