My Rise & Shine Granola has a coffee and cacao flavor and is packed with the heartiness of walnuts, hazelnuts, and macadamia nuts. It is less sweet for that true morning coffee vibe. I eat my granola over greek yogurt, but you can use it for granola bars or as a cereal topping.

Non-stick spray
¼ cup shredded coconut flakes, unsweetened
½ cup walnuts, halves or pieces
½ cup hazelnuts
¼ cup macadamia nuts
2 tablespoons flaxseeds
Pinch of salt
1/8 cup brown sugar
2 teaspoons ground coffee or espresso powder
1 teaspoon cacao powder (you can use cocoa powder as a sub)
2 tablespoons canola oil
¼ cup maple syrup
¼ cup honey
½ teaspoons vanilla
3 cups old-fashioned rolled oats
¼ cup cacao nibs
¾ cup dried dates, chopped

Steps:

  • Heat oven to 250º F and coat a baking sheet with non-stickspray.
  • In a small mixing bowl, mix coconut, walnuts, hazelnuts, macadamia nuts, and flaxseeds.
  • In a large mixing bowl, combine salt, brown sugar, ground coffee, cacao powder, oil, maple syrup, honey, and vanilla. Toss in the nut/seed mixture until the nuts are fully coated. Add rolled oats. Transfer mixture to baking sheet spreading out to make an even layer.

1/4 cup flax seed
1/2 cup oil
1 tablespoon carob powder (optional) or 1 tablespoon cocoa (optional)
1 teaspoon cinnamon
1/4-1/2 cup dry sweetener
1/2 teaspoon salt
1/2 cup shredded coconut
1/2 cup raisins
1/2 cup chopped dates
1/2 cup dried cranberries

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together the pat flakes, sunflower seeds, almonds, sesame seeds, and flax seeds.
  • In a medium sized bowl, whisk together the oil, carob powder, cinnamon, sweetener, and salt.
