DIRTY RISOTTO

Categories     main-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 13

5 cups reduced-sodium chicken broth
2 tablespoons butter
2 ounces pancetta, chopped
1 link (about 6 ounces) spicy Italian sausage, casing removed
3/4 cup finely chopped onion
1 cup chopped red bell pepper
4 ounces button mushrooms, coarsely chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups Arborio rice or medium-grain white rice
3/4 cup dry white wine
1/2 cup freshly grated Parmesan
1 tablespoon chopped fresh Italian parsley leaves

Steps:

  • In a medium saucepan, bring the broth to a simmer. Cover the broth and keep warm over low heat.
  • In a large heavy saucepan, melt the butter over medium heat. Add the pancetta and sausage and saute until golden brown, about 5 minutes. Add the onion, bell pepper, and mushrooms and saute until tender, scraping up the browned bits on the bottom of the pan, about 8 minutes. Season with salt and pepper. Add the rice and stir to coat. Add the wine and simmer until the wine has almost completely evaporated, about 1 minute. Add 1/2 cup of simmering broth and stir until almost completely absorbed, about 2 minutes. Continue cooking the rice, adding the broth 1/2 cup at a time, stirring constantly and allowing each addition of broth to absorb before adding the next, until the rice is tender but still firm to the bite and the mixture is creamy, about 25 to 30 minutes total. Remove from the heat. Stir in 3/4 of the Parmesan. Transfer the risotto to a serving bowl. Sprinkle with the parsley and remaining Parmesan and serve immediately.

RISOTTO WITH GIBLETS

Yield Makes 6 servings

Number Of Ingredients 11

3/4 pound assorted chicken giblets (gizzards, hearts, and livers)
5 tablespoons olive oil, plus oil for sautéing livers (optional)
2 onions, diced
2 carrots, peeled and diced
2 celery stalks, diced
2 cloves garlic, minced
2 cups dry red or white wine
7 cups chicken broth
2 cups Arborio rice
Salt and freshly ground black pepper to taste
1 cup peeled, seeded, and diced plum tomatoes (fresh or canned)

Steps:

  • Trim the livers, cutting away any connective pieces and any dark spots. Cut into large bite-sized pieces, keeping the lobes in tact as much as possible. Refrigerate until needed. Trim the chicken hearts of fat.
  • Trim all the fat, connective tissue, and gristle from the gizzards, leaving just the meaty parts.
  • Warm 3 tablespoons of the olive oil in a large sauté pan over medium heat. Add 1 of the onions, the carrots, and the celery and sauté until softened, 5 to 8 minutes. Add the garlic and the gizzards and hearts and sauté for 5 minutes. Add the wine and let it bubble up in the pan. When it is reduced by half, add enough of the broth to barely cover the gizzards and hearts (about 2 cups). Simmer over low heat until tender, about 1 hour or so. Remove the giblets from the pan with a slotted spoon, transfer to a cutting board, and chop coarsely. Set the giblets aside.
  • Pour the remaining broth (about 5 cups) into a saucepan and bring to a simmer; adjust the heat to maintain a gentle simmer. Heat the remaining 2 tablespoons olive oil in a saucepan over medium heat. Add the remaining diced onion and sauté until softened, about 8 minutes. Add the rice and stir until opaque, about 3 minutes. Add a ladleful (about 1 cup) of the simmering broth and stir for 3 to 4 minutes until the broth is absorbed. Reduce the heat and continue to add the broth a ladleful at a time, waiting until each addition is absorbed before adding the next, until the rice kernals are al dente at the center and creamy on the outside, 18 to 20 minutes in all.
  • Meanwhile, cook the chicken livers: If you want to keep this kosher, broil the livers until cooked through. If not, you may sauté them in a separate pan in olive oil until golden on the outside and still pink at the center. Season with salt and pepper and set aside; keep warm.
  • Just before the rice is ready, stir in the giblets and tomatoes and warm through. Transfer to a warmed serving dish and garnish with the chicken livers. Serve immediately

RISOTTO WITH TRUFFLE AND PARMESAN

Risotto with Truffle and Parmesan image

I created this recipe because there is nothing quite like creamy, savory rice. It is so delicious and filling, it can be a meal in itself! You do need to tend to the stove for 30 minutes for stirring, but it is definitely worth the effort. I used regular milk (not cream) and it was absolutely heavenly and creamy! Serve as soon as possible (as it turns like glue if held too long!)

Categories     Short Grain Rice

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

1 (14 1/2 ounce) can low sodium chicken broth, plus water to equal 2-1/2 cups
3 tablespoons olive oil
1 1/4 cups arborio rice (8 ounces)
3 cloves garlic, large and minced
2 tablespoons parmesan cheese, freshly grated
parsley, freshly chopped for garnish

Steps:

  • Bring the broth to a boil over high heat.
  • Cover; reduce to low and keep at a simmer.
  • In a medium saucepan, heat the olive oil over medium heat.
  • Add the rice and stir for about 1 minute to coat all grains.
  • Add the garlic and cook an additional minute.
  • Add about 1/2-cup of the simmering broth and stir well.
  • Stir often until the liquid is absorbed.
  • Add another 1/2-cup of the broth and repeat the process.
  • It should take about 30 minutes until the last of the broth is absorbed.
  • Regulate the heat if it appears that the liquid is absorbed too fast.
  • When the rice is done, add the Parmesan cheese and stir well to combine.
  • Garnish with the parsley.
  • Serve immediately.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your risotto. Look for plump, meaty giblets and fresh vegetables.
  • Cook the giblets properly: Giblets can be tough if they are not cooked properly. Be sure to simmer them in water or broth until they are tender.
  • Use a good quality risotto rice: Arborio or Carnaroli rice are both good choices. These rices are able to absorb a lot of liquid and become creamy without getting mushy.
  • Toast the rice before adding the liquid: This will help to develop the flavor of the rice and prevent it from becoming sticky.
  • Add the liquid gradually: Do not add all of the liquid at once. Add it in small increments, stirring constantly, until the rice is cooked through and creamy.
  • Stir the risotto constantly: This will help to prevent the rice from sticking to the bottom of the pot and burning.
  • Add the cheese and butter at the end: This will help to create a rich, creamy sauce.
  • Season the risotto to taste: Be sure to taste the risotto before serving and adjust the seasonings as needed.
  • Serve the risotto immediately: Risotto is best served as soon as it is cooked. It will start to lose its creaminess if it sits for too long.

Conclusion:

Risotto with giblets is a delicious and hearty dish that is perfect for a special occasion. It is easy to make and can be tailored to your own taste preferences. With a little practice, you can make a perfect risotto that will impress your family and friends.
