ROASTED FINGERLING POTATOES

Roasted Fingerling Potatoes image

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 3

Reserved duck fat and skin
Coarse salt and freshly ground pepper
1 pound small fingerling potatoes, halved lengthwise

Steps:

  • Place skin and fat in a small saucepan. Heat over medium heat, and cook until the fat has rendered. Remove from heat, and set aside.
  • Preheat oven to 450 degrees. Bring a medium saucepan of water to a boil. Add a large pinch of salt and potatoes. Cook for 3 minutes. Drain well.
  • Place a small rimmed baking sheet in the oven until hot. Remove, and pour about 2 tablespoons of the rendered fat onto the baking sheet to coat. Place potatoes, cut-side down, on baking sheet. Season with salt and pepper. Roast until golden brown and tender, about 25 minutes. Remove from oven, and season with salt and pepper; serve immediately.

Tips:

  • Choose the right potatoes: Fingerling potatoes are the best choice for this recipe because they hold their shape well and have a tender texture. If you can't find fingerling potatoes, you can use small red potatoes or Yukon Gold potatoes.
  • Wash the potatoes thoroughly: Scrub the potatoes well with a vegetable brush to remove any dirt or debris. This will help to ensure that the potatoes cook evenly.
  • Cut the potatoes into even-sized pieces: This will help them to cook evenly. If the potatoes are too large, they will take longer to cook and may not be cooked through by the time the mushrooms are done.
  • Use a large skillet: A large skillet will give the potatoes and mushrooms plenty of room to cook without overcrowding. If you use a too-small skillet, the potatoes and mushrooms will steam instead of roast, and they won't be as crispy.
  • Don't overcrowd the skillet: When you add the potatoes and mushrooms to the skillet, make sure that they are in a single layer. If they are overcrowded, they will steam instead of roast, and they won't be as crispy.
  • Roast the potatoes and mushrooms until they are tender: The potatoes should be tender when pierced with a fork, and the mushrooms should be browned and slightly caramelized. This will take about 20-25 minutes.
  • Add the Stilton cheese at the end: The Stilton cheese will melt and become gooey when it is added to the hot potatoes and mushrooms. If you add it too early, it will melt completely and disappear.
  • Serve the potatoes and mushrooms immediately: These are best served hot out of the oven. You can garnish them with fresh parsley or chives, if desired.

Conclusion:

Roast fingerling potatoes, mushrooms, and Stilton cheese are a delicious and easy-to-make side dish that is perfect for any occasion. They are crispy on the outside, tender on the inside, and full of flavor. The Stilton cheese adds a rich and creamy flavor that takes these potatoes and mushrooms to the next level.
