- In a large bowl, combine 1 cup (240 ml) of the soy sauce with the sugar, garlic, and scallions, stirring until mixed.
- Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in.
- Place the pork in the marinade and toss to coat evenly. Marinate for one hour.
- Preheat the oven to 275ºF (140°C).
- On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet.

ROAST PORK LOIN WITH HONEY/MUSTARD/ROSEMARY GLAZE
Steps:
- Remove pork roast from refrigerator and allow to reach room temperatur (1-2 hours).
- Preheat oven to roast at 400 degrees. Line a 9"x13"x2" pan with aluminum foil.
- Slice 1 to 2 large cloves of garlic lengthwise into approximately 9-12 long slices. Using a sharp knife on the fatty side of the roast, make deep slits into which you will insert each piece of garlic. Don't pierce the roast all the way through.
- Chop 2 tablespoons of rosemary finely. Take 2 large coves of garlic and run through a press onto the rosemary. Add salt and pepper to the garlic and rosemary. Using a teaspoon and/or a large flat knife, mix and crush the mixture until it is somewhat paste-like. Using your hands, spread over the entire roast, including the ends. Rub it in!
- Place the roast, fat side down, into the pan. Drizzle olive oil on the top (exposed) part of the roast and rub into the meat. Place it in the oven for 30 minutes.
- While the roast is cooking, you'll make the glaze as follows:
- Run 1 large clove of garlic through a press into a small bowl (1 cup capacity). Chop the remaining rosemary finely and add to the garlic. Follow with mustard, honey and vinegar.
- Stir thoroughly to mix.
- After 30 minutes, remove roast and flip it so it's fat side up. Using a silicone or baking brush, apply 2/3rds of the glaze to the top, sides and ends of the roast. Return roast to the oven for another 25 minutes.
- After 20-25 minutes, use an instant read thermometer to check meat temperature. I like my roast at about 145 degrees but others might like it more done - 155 degreees tops. Once roast reaches desired temperature, remove it from the oven and set to rest. Apply the remainder of the glaze at this time. Slice and serve!

- Place pork in a roasting pan.
- In a small bowl, combine the remaining ingredients, except for the Pup's Monadnock Harvest Hard Cider.
- Rub the mixture over the pork, cover, and marinate for at least 30 minutes.
- Pour off and reserve the marinade.
- Add the Pup's Monadnock Harvest Hard Cider to the pan, place in a preheated 475°F oven, and roast for 20 minutes.

- Rinse pork and pat dry. Rub mustard over it and season with the salt and pepper and place in a large nonreactive pan. Pour cider and vinegar over and refrigerate, turning often, for at least 3 hours or up to overnight.
- Heat oven to 350 degrees. Let pork come to room temperature. Drain off marinade and reserve in a small saucepan.
- If using, place rib rack in roasting pan; rest the pork in the curve of the bones. Otherwise, place pork directly in roasting pan.
- Reduce oven temperature to 325 degrees and place pork in oven. Roast, basting with pan juices, until a meat thermometer inserted into the center of the pork reads 155 degrees to 160 degrees, about 1 hour and 40 to 50 minutes with the rack and 1 hour and 15 minutes without the rack. - Meanwhile, place saucepan of marinade over medium-low heat; simmer until thick enough to coat the back of a spoon, about 1 hour; it will reduce to about 1/3 cup. Brush over pork during last 30 minutes of cooking.
- Remove roast from oven and let rest for about 30 minutes.
- Slice roast and layer with Green Tomato Chutney on Anadama Bread for sandwiches.
