Categories     Vegetable

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

2 medium acorn squash (about 1 pound each)
extra virgin olive oil
kosher salt & freshly ground black pepper
2 cups heavy cream
1 garlic clove, crushed
1 sprig thyme
1 cup grated parmesan cheese
1/8 teaspoon grated nutmeg
1 lb cheese tortellini (store bought)
kosher salt & freshly ground black pepper
grated parmesan cheese, for topping
fresh sage leaf (to garnish)

Steps:

  • Preheat oven to 350°F.
  • Split the squash in half (cut lengthwise from top end to bottom end) cutting right through the stem so each half has a piece of stem attached. Scrape out the seeds with a spoon and discard. Cut a small piece off the rounded bottom to give it a base to sit on. Place the squash halves, cut sides up, on a baking sheet and sprinkle with salt and pepper. Drizzle with extra-virgin olive oil and bake in the oven for 25-30 minutes, or until tender.
  • Meanwhile, prepare the tortellini mix. Heat a large pot of salted water to cook the tortellini inches In a separate saucepan heat the heavy cream over medium heat with garlic and thyme and reduce until thick and coats the back of a wooden spoon. Add the nutmeg and parmesan, then melt over low heat. Cook the tortellini in the boiling water (3-4 minutes for fresh tortellini, or follow directions of brand) and then strain and toss into cream mixture. Use some of the pasta water to thin out sauce if necessary. Season with salt and pepper and then divide amongst cooked squash cups.
  • Turn the oven up to 400°F.
  • Sprinkle the tops of squash bowls with grated parmesan and a fresh sage leave and then bake in the oven for a further 10 minutes until the cheese is melted and golden brown.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 10

1 pound chopped peeled butternut squash, cut into 3/4-inch pieces
12 ounces shiitake or oyster mushrooms, stemmed and torn into bite-size pieces
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup heavy cream
3 cloves garlic, smashed
8 fresh sage leaves
1 to 2 teaspoons fresh lemon juice
2 9-ounce packages refrigerated cheese tortellini
Shredded Parmesan cheese and finely chopped chives, for topping

Steps:

  • Place a baking sheet on the middle oven rack and preheat to 450˚ F. Toss the squash, mushrooms, olive oil and a big pinch each of salt and pepper in a large bowl. Spread out on the hot baking sheet and roast, tossing once or twice, until the vegetables are browned around the edges and tender, 20 to 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Combine the heavy cream, garlic, sage and a pinch of salt in a small saucepan. Bring to a boil, then reduce to a simmer and cook until reduced by about one-third, 5 to 7 minutes. Remove from the heat and stir in 1 teaspoon lemon juice; add more lemon juice to taste.
  • Add the tortellini to the boiling water and cook as the label directs. Reserve 1 cup cooking water, then drain (reserve the pot).
  • Strain the cream mixture through a fine-mesh sieve into the reserved pot. Add the tortellini and 1/2 cup reserved cooking water; toss over medium heat until coated, adding a few more tablespoons cooking water as needed to loosen.
  • Divide the roasted vegetables among shallow bowls. Spoon the tortellini and sauce on top. Sprinkle with Parmesan and chives.

BAKED STUFFED ACORN SQUASH

Baked Stuffed Acorn Squash image

This makes a substantial vegetarian - or vegan if you leave out the cheese - Thanksgiving main dish. It is another riff on the native American tradition of the Three Sisters - corn, beans, and squash. I used acorn squash here, and it serves as a vessel for the sweet and pungent bean, corn and tomato filling. Acorn squash comes in various sizes; the larger ones, which are sometimes all I can find, take almost an hour to soften and cook through; the finished squash can be cut in half or even into thirds if too big for one serving. With everything that comes on the Thanksgiving sideboard, that will probably be the case. I always bake the squash for about 20 minutes before cutting it in half; they soften up a little bit, which makes it much easier to cut.

Time 2h

Yield 8 substantial main dish servings, 12 to 16 smaller servings

Number Of Ingredients 14

4 large or 6 smaller acorn squash
3 tablespoons extra virgin olive oil, plus additional for basting
1 medium onion, finely chopped
1 red pepper, diced
1 28-ounce can chopped tomatoes with juice, pulsed to a coarse purée in a food processor
2 tablespoons tomato paste
2 tablespoons mild honey, maple syrup or pomegranate molasses
2 tablespoons red wine vinegar, sherry vinegar or apple cider vinegar
Salt to taste
1/2 teaspoon cayenne
3 cups cooked pintos, black beans or red beans, or 2 cans, drained and rinsed
1 cup corn kernels
2/3 cup breadcrumbs
2 ounces / 1/2 cup Gruyère, grated

Steps:

  • Heat oven to 375 degrees. Place squash on a baking sheet and bake 20 minutes, until soft enough to easily cut in half. Wait until cool enough to handle (about 15 minutes), then cut in half (stem to tip) and scoop out seeds and membranes.
  • Meanwhile, heat 2 tablespoons of olive oil over medium heat in a large skillet and add onion. Cook, stirring often, until it begins to soften, about 3 minutes. Add red pepper and a generous pinch of salt and cook, stirring, until tender, about 5 minutes. Add tomatoes and tomato paste and cook, stirring often, until tomatoes have cooked down slightly, about 5 minutes. Add honey, maple syrup or pomegranate molasses, vinegar, salt and cayenne, and bring to a simmer. Simmer 8 to 10 minutes, until thick and fragrant. Taste and adjust seasonings. Stir in beans and corn and simmer another 5 minutes.
  • Oil 1 or 2 baking dishes or a sheet pan that will accommodate all the squash. Season cavities and cut sides of the squash with salt and pepper and brush with olive oil or melted butter. Fill with bean mixture. Mix together bread crumbs, Gruyère and remaining olive oil and sprinkle over the filling. Brush exposed edges of squash with oil. Place in the baking dish or on baking sheet and cover tightly with foil. Bake large squash for 45 minutes, check smaller squash after 30 minutes. The flesh should be easy to penetrate with the tip of a knife. Uncover and return to oven for 5 to 10 minutes, or until breadcrumbs and cheese are lightly browned. Serve hot or warm.

  • Brush cut sides of squash with 1 tablespoon olive oil and place, skin-side up, on a baking sheet.

Tips:

  • Choose the right squash: Acorn squash is a great choice for stuffing because it has a firm texture that can hold its shape. Look for squashes that are about 1 pound each and have a deep green color.
  • Roast the squash properly: Roasting the squash brings out its natural sweetness and caramelizes the edges. Preheat your oven to 400 degrees Fahrenheit and roast the squash for about 45 minutes, or until it is tender when pierced with a fork.
  • Use a variety of fillings: The possibilities are endless when it comes to stuffing acorn squash. You can use a classic combination of sausage, bread crumbs, and herbs, or try something different like roasted vegetables, quinoa, or wild rice.
  • Don't overstuff the squash: The squash should be filled, but not so much that it bursts. If you overstuff the squash, the filling will not cook evenly.
  • Serve the squash immediately: Roasted acorn squash is best served hot out of the oven. You can garnish it with fresh herbs or a drizzle of olive oil.

Conclusion:

Roasted acorn squash stuffed with cheese tortellini is a delicious and elegant dish that is perfect for a special occasion. It is easy to make and can be tailored to your own taste preferences. With its combination of roasted squash, creamy cheese tortellini, and savory sausage, this dish is sure to be a hit at your next dinner party.
