Tips:

  • For the best flavor, use fresh, young carrots. Look for carrots that are about 2 to 3 inches long and have a bright orange color.
  • To easily peel baby carrots, use a vegetable peeler. Alternatively, you can use a sharp knife to scrape off the skin.
  • If you don't have any orange zest, you can use 1/2 teaspoon of orange extract instead.
  • If you don't have any fresh mint, you can use 1/2 teaspoon of dried mint instead.
  • Be careful not to overcrowd the carrots on the baking sheet. If they are too close together, they won't roast evenly.
  • Keep an eye on the carrots while they are roasting. They should be tender but still slightly firm.
  • Serve the carrots immediately with the orange glaze. They can also be served at room temperature.

Conclusion:

Roasted baby carrots are a delicious and healthy side dish that can be enjoyed by people of all ages. They are easy to make and can be roasted in just 20 minutes. The orange glaze adds a sweet and tangy flavor that complements the carrots perfectly. If you are looking for a simple but flavorful side dish, roasted baby carrots are a great option.
