  • Choose small to medium beets, about 2 inches in diameter, for the best flavor and texture.
  • Scrub the beets thoroughly to remove any dirt or debris, but do not peel them. The skin helps to keep the beets moist and flavorful during roasting.
  • Toss the beets with a little olive oil, salt, and pepper before roasting. This will help to caramelize the beets and enhance their flavor.
  • Roast the beets at a high temperature, 425°F, for about 45 minutes, or until they are tender when pierced with a fork.
  • Let the beets cool slightly before peeling and slicing them. You can also use a paper towel to rub off the skins.
  • Roasted beets can be used in a variety of dishes, such as salads, soups, and pasta dishes. They can also be pickled or canned for later use.
