1 pound chicken thighs (or breasts cut into one inch pieces)
1 Tablespoon olive oil
1/4 cup bourbon*
1/2 cup soy sauce
1/4 cup brown sugar
3 garlic cloves (minced)
1 teaspoon cornstarch
1 tablespoon water
sliced green onions (for garnish)

Steps:

  • In a medium sized skillet over medium high heat add the olive oil and chicken. Cook until brown and no longer pink.
  • In a small bowl whisk together bourbon, soy sauce, brown sugar, and garlic. Whisk together cornstarch and water and add to the sauce.
  • Pour the sauce over the chicken and simmer for 3-4 minutes until the sauce thickens up. Serve over rice and garnish with chopped green onions if desired.

4 skinless, boneless chicken breast halves
1 teaspoon ground ginger
4 ounces soy sauce
2 tablespoons dried minced onion
½ cup packed brown sugar
⅜ cup bourbon
½ teaspoon garlic powder

Steps:

  • Place chicken breasts in a 9x13 inch baking dish. In a small bowl combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder. Mix together and pour mixture over chicken. Cover dish and place in refrigerator. Marinate overnight.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove dish from refrigerator and remove cover. Bake in the preheated oven, basting frequently, for 1 1/2 hours or until chicken is well browned and juices run clear.

[glaze from my bourbon-glazed salmon]
serves 4-6
4 large, bone-in split chicken breasts (mine totaled 4.8lbs)
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon smoked paprika
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 tablespoons olive oil
1 1/2 cups bourbon
1 1/4 cups brown sugar
2 garlic cloves, minced
2 teaspoons apple cider vinegar
2 tablespoons worcestershire sauce
2 tablespoons honey
1 teaspoon ground mustard
sage, if desired

Steps:

  • Preheat oven to 425 degrees F. Combine the bourbon, sugar, mustard, garlic, honey, vinegar and worcestershire in a small saucepan and whisk. Heat over high heat and allow it to come to a boil. Reduce to a simmer and let simmer for 10-12 minutes, or until mixture reduces by about half. Set aside and let sit at room temperature while you prepare the chicken. The glaze will thicken a bit at this time. In a bowl, combine salt, pepper, paprika, onion and garlic powder. Heat a skillet over medium-high heat and add olive oil. Season chicken breasts on both sides with mixture, then place skin-side down in the skillet. Cook for 2-3 minutes, or until chicken is golden brown, then flip and repeat on the other side. When finished, add chicken to an oven-safe baking dish. Pour half of the glaze overtop of chicken, add sage leaves on top if desired, then roast for 30 minutes. Half way through cooking, brush chicken with a bit more glaze. When chicken is finished, remove from oven and let cool for 5-10 minutes. Serve with additional glaze for topping.

2 tablespoons cornstarch
4 teaspoons Worcestershire sauce

1/4 cup Bourbon
1 Tbs. apple cider vinegar
4 bone-in chicken breasts, about 3 lbs.
1 tsp. paprika
1/2 tsp. kosher salt
1/4 tsp. ground cinnamon
1/4 tsp. garlic powder
1/8 tsp. cayenne

  • Preheat oven to 425F. Line roasting pan with foil leaving 2-inch overhang, for easy clean up. In blender puree peach preserves, Bourbon and vinegar until smooth. In small saucepot over medium-high heat cook peach mixture until reduced and thickened, about 5 minutes, stirring occasionally. Remove from heat and reserve. Arrange chicken in prepared pan. Sprinkle with paprika, salt, cinnamon, garlic powder and cayenne. Roast 45 minutes or until meat thermometer reads 165F, brushing with reserved glaze several times during last 20 minutes of cook time.

It was submitted by a retired chef named Ken Olszewski in response to a reader request or a recipe challenge. I like to garnish this with parsley so I can sing "parsley, sage, rosemary, and thyme" while I am cooking.

2 1/2-3 lbs chicken pieces, bone-in or 1 frying chicken, cut up
3 cloves garlic, minced
1/8 teaspoon cayenne pepper
3 tablespoons dark brown sugar
1 teaspoon sage

1 tablespoon flour
salt
3/4 cup Bourbon

Steps:

  • Preheat oven to 350 degrees.
  • Brown chicken in skillet.
