SPAGHETTI WITH ROASTED BUTTERNUT SQUASH
Garlic takes on a mild and somewhat sweet flavor when roasted, and in this dish you roast the garlic and the butternut squash at the same time. It's a good way to use squashes that come into season in the fall.

Tips:
- Select the right butternut squash: Choose a squash that is firm and heavy for its size, with a deep, orange color. Avoid any squash that has soft spots or bruises.
- Roast the squash properly: To ensure that the squash is cooked through and caramelized, roast it at a high temperature (400°F or higher) for at least 30 minutes, or until it is tender when pierced with a fork.
- Use fresh arugula: Arugula wilts quickly, so it is important to use fresh leaves for this recipe. If you can't find arugula, you can substitute baby spinach or kale.
- Make the dressing ahead of time: The dressing for this salad can be made up to 2 days in advance. This will save you time when you're ready to assemble the salad.
Conclusion:
This roasted butternut squash and wilted arugula spaghetti is a delicious and healthy meal that is perfect for fall. The squash is roasted until caramelized and tender, the arugula is wilted and slightly bitter, and the dressing is creamy and flavorful. This salad is sure to be a hit at your next dinner party or potluck.
