ROASTED CAULIFLOWER WITH DATES AND PINE NUTS (CLAIRE ROBINSON)
Simple and FABULOUS. Recipe found in Food Network Magazine Nov 2010. This could easily be made vegan by using vegan margarine which is what I did. The first time I made it I made it as is and loved it. Second time I added chinks of butternut squash and used walnuts in place of pine nuts and then topped it with manchego shavings.....delish! We eat this as a main course.

PAN-ROASTED CAULIFLOWER WITH PINE NUTS, GARLIC AND ROSEMARY
My BF found this recipe in a recent issue of Cottage Living, courtesy of Sara Foster. We both love cauliflower, and this recipe gives it a nice crunch and nutty taste. Another recipe to leave in the oven while you are taking care of the rest of dinner. We cut down the 1/4 cup olive oil to about a tablespoon. Leave it as is if you are not concerned about fat intake.

Tips:
- Choose the right cauliflower: Look for a head of cauliflower that is compact and heavy, with tightly packed florets. Avoid heads with any signs of bruising or wilting.
- Roast the cauliflower at a high temperature: This will help to caramelize the florets and give them a nutty flavor. Aim for a temperature of 425 degrees Fahrenheit or higher.
- Don't overcrowd the pan: Make sure to give the cauliflower florets enough space to roast evenly. If the pan is too crowded, the florets will steam instead of roast.
- Season the cauliflower well: Use a combination of salt, pepper, and other spices to taste. You can also add a drizzle of olive oil or melted butter to help the cauliflower brown.
- Roast the cauliflower until it is tender: The cauliflower is done roasting when it is tender when pierced with a fork. This should take about 20-25 minutes.
- Add the dates and pine nuts at the end: This will help to prevent them from burning. Stir the cauliflower, dates, and pine nuts together until they are evenly combined.
- Serve the cauliflower immediately: Roasted cauliflower is best served hot out of the oven. You can garnish it with fresh herbs, such as parsley or cilantro.
Conclusion:
Roasted cauliflower with dates and pine nuts is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its combination of roasted vegetables, sweet dates, and crunchy pine nuts, this dish is sure to please everyone at the table. So next time you are looking for a healthy and flavorful side dish, give roasted cauliflower with dates and pine nuts a try. You won't be disappointed!
