Baingan Bharta (Roasted Eggplant Salad) image

Provided by Aarti Sequeira

Time 1h25m

Yield 4 servings

Number Of Ingredients 10

2 large eggplants
2 tablespoons peanut oil, plus more for eggplant
1 medium white onion, finely diced
4 cloves garlic, minced
1 small serrano pepper, seeded (if you wish less heat) and minced
1/4 cup fresh cilantro leaves and soft stems, minced, plus more picked leaves for garnish
1/4 teaspoon ground turmeric
1/4 teaspoon ground cumin, plus more for sprinkling
Kosher salt and freshly ground black pepper
2 cups Greek yogurt, beaten until smooth

Steps:

  • Preheat the oven to 500 degrees F.

Sit them on the baking sheet and roast until soft all the way to the center and the skin is brown, about 45 minutes, rotating the pan and flipping the eggplants halfway through. Remove from the oven and cool.
  • Once cool, skin the eggplant. Chop the flesh until it's relatively smooth but not mushy.
  • In a large skillet, warm the peanut oil over medium-high heat. Once the oil is shimmering, add the onion and saute until it turns golden brown. Add the eggplant flesh, garlic, chile and cilantro leaves. Cook 2 minutes. Add a splash of water if it begins to stick.
  • Add the turmeric, cumin, and 2 teaspoons of salt. Stir and cook another 5 minutes.
  • Turn off the heat. Add the yogurt and stir to combine. Taste for seasoning, and garnish with cilantro leaves and a sprinkle of ground cumin. Serve either warm or slightly chilled.

PASTA SALAD WITH ROASTED EGGPLANT, CHILE AND MINT

Pasta Salad With Roasted Eggplant, Chile and Mint image

This is a pasta salad, but it is not the mayonnaise-slicked, droopy-noodle kind found on salad bars. To bring out the soft meatiness of the eggplant, roast cubes of it until they collapse into a caramelized heap, and toss them with chopped raw tomatoes and a handful of salty capers. Then dress the vegetables and pasta in the pungent, spicy oil, which is rich with anchovies, browned garlic and chiles, a strong contrast to the sweetness of the tomatoes and eggplant.

Provided by Melissa Clark

Categories     dinner, weekday, pastas, main course

Time 45m

Yield 2 servings

Number Of Ingredients 14

1 and 1/2 pounds eggplant (about 4 medium), cut into 1-inch cubes
5 tablespoons extra-virgin olive oil, more as needed
1/2 teaspoon kosher salt, more as needed
1/4 teaspoon black pepper, more as needed
1 very large ripe tomato, cored and diced (1 and 1/2 cups)
1/2 pound dried penne
3 garlic cloves, peeled and smashed
3 anchovy fillets
Large pinch chile flakes
2 tablespoons drained capers
Freshly squeezed lemon juice
1/4 cup torn basil leaves
2 tablespoons torn mint leaves
2 tablespoons finely chopped chives

Steps:

  • Heat oven to 400 degrees. On rimmed baking sheet, toss together eggplant, 3 tablespoons olive oil, ½ teaspoon salt and ¼ teaspoon pepper. Spread into one layer. Roast, tossing occasionally, until the eggplant is golden brown, about 25 minutes.
  • Place tomato in large bowl and sprinkle lightly with salt.
  • Bring large pot of salted water to a boil. Cook penne to al dente according to package instructions; drain well.
  • While pasta cooks, heat large skillet over medium-high heat. Add 2 tablespoons oil. Stir in garlic, anchovies and chile flakes, and cook until golden and soft, about 3 minutes. Turn off heat and, using slotted spoon, transfer garlic to cutting board. Let garlic cool for a few minutes, then chop up and add back to the oil. Pour garlic-chile into bowl with tomatoes. Add eggplant and capers, and toss well.
  • Add pasta to bowl with eggplant and tomatoes. Season with salt, pepper and lemon juice to taste, and drizzle generously with oil. Toss in herbs and serve warm or at room temperature.

ROASTED EGGPLANT AND TOMATO SALAD

Roasted Eggplant and Tomato Salad image

Note: When made a day or even several hours ahead, the parsley will lose some of its bright green color. If you prefer, you can gently stir in the parsley at serving time.

Provided by swmdecoy-spam

Categories     Vegetable

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 11

1/2 cup extra virgin olive oil, plus extra for the baking sheet
2 eggplants, stemmed but unpeeled (about 2 pounds total)
kosher salt
1 -1 1/4 lb plum tomato, halved, seeded and cut into 1/2-inch dice
1/4 cup chopped onion
4 teaspoons minced garlic
1/4 cup fresh lemon juice, plus more if needed
1 tablespoon ground cumin
2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/3 cup chopped flat leaf parsley (see note)

Steps:

  • Arrange rack at center position and preheat oven to 450 degrees. Oil a large, heavy baking sheet generously with olive oil.
  • Cut each eggplant into 1-inch cubes and place them on baking sheet. Drizzle with 1/2 cup olive oil, then toss to coat all the eggplant well. Spread diced eggplant in a single layer in pan and season with 1 teaspoon salt. Roast, stirring every 5 minutes, until golden and tender, about 15 minutes. Watch carefully so that eggplant does not overcook. Remove and cool 10 minutes. Transfer to large non-reactive mixing bowl and add tomatoes, onion and garlic.
  • Whisk lemon juice with cumin, paprika and cayenne pepper in a small bowl. Pour mixture over eggplant and tomatoes, and toss very gently, taking care to keep eggplant intact.
  • Add parsley to bowl with eggplant. Mix gently. Taste and season with more salt, and a squeeze or two more of lemon juice if desired. (This salad actually tastes better when prepared 3 to 4 hours ahead so that the flavors can meld. It can be prepared a day in advance. Refrigerate and bring to room temperature 30 minutes before serving when making ahead.).
  • Spoon salad into a serving bowl or onto a platter. Makes 4 to 6 servings.

CHICKPEA ORZO SALAD WITH HARISSA-ROASTED EGGPLANT

Chickpea Orzo Salad With Harissa-Roasted Eggplant image

Where a typical potluck pasta salad is creamy and mayonnaise-rich, this one is vegetable-forward, crunchy and spicy. The heat comes from harissa, a North African paste typically made with red and hot peppers, and spices like coriander, caraway and cumin, which is used to marinate the vegetables and to dress the salad. Offset some of the intensity with mild mozzarella cheese, deeply toasted walnuts and salty bright-green olives, and no one will miss your great aunt's bowties.

Provided by Sarah Jampel

Categories     dinner, lunch, weekday, main course

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 13

3 tablespoons olive oil, plus more for the pasta
2 tablespoons harissa, plus more for seasoning
1 large Italian eggplant, cut into 1-inch cubes
1 red bell pepper, seeded and cut into 1-inch pieces
Kosher salt
Black pepper
8 ounces orzo (or other small pasta)
1 cup walnuts
1 (15-ounce) can chickpeas, drained and rinsed
1/2 cup pitted green olives (preferably bright green Castelvetranos), roughly chopped or torn
1/4 cup fresh thyme or fresh oregano, roughly chopped, or a mix of the two
8 ounces fresh mozzarella, cut into 1/2-inch cubes
Baby kale or mixed greens, for serving (optional)

Steps:

  • Make the eggplant: Heat the oven to 450 degrees. Line two baking sheets with parchment paper. In a large bowl, whisk together the olive oil and harissa, then mix in the eggplant cubes and red pepper to coat. Season with salt and pepper. Transfer vegetables to one of the baking sheets and roast for 25 to 30 minutes, stirring occasionally, until the vegetables are tender and charred in places.
  • Meanwhile, make the orzo: Bring a medium pot of heavily salted water to a boil. Add the orzo and cook to al dente according to package instructions. Drain, add to a large bowl, and mix with about 1 teaspoon of olive oil. Set aside to cool slightly while you finish cooking.
  • Spread the walnuts on the other baking sheet and toast in the hot oven (alongside the vegetables if you have room) for 4 to 6 minutes, until they're fragrant and the skin is papery. (Watch carefully: These burn easily!) Roughly chop.
  • To the big bowl with the warm orzo, add the roasted vegetables. Then add the chickpeas, walnuts, olives, herbs and mozzarella. Taste for salt and pepper, and adjust as necessary. Stir in an additional dollop of harissa, if you'd like. Serve over a bed of greens for a more traditional salad.

Roasted Eggplant Salad With Leeks and Cilantro Leaves image

Provided by Julia Moskin

Categories     salads and dressings, side dish

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 12

1/4 cup soy sauce
1/4 cup sugar
1/4 cup water
1 tablespoon white vinegar
1 tablespoon Vietnamese chile-garlic sauce (tuong ot toi) or sriracha
1 tablespoon freshly squeezed lime juice
1/4 cup canola oil, plus extra for pans
12 baby leeks, well washed, or thick scallions
3 and 1/2 pounds Japanese or other thin-skinned eggplants
Salt and black pepper
1 and 1/2 cups loosely packed cilantro leaves and sprigs, plus about 12 sprigs for garnish, if desired
Chopped roasted peanuts, optional

Steps:

  • Make the dressing: stir soy sauce, sugar, water and vinegar together until sugar dissolves. Stir in chile sauce and lime juice, taste and adjust the seasonings. There should be a good balance of sweet, salty, tangy and hot.
  • Heat oven to 450 degrees. Lightly oil a large baking sheet, preferably nonstick. Trim dark green tops off leeks (or scallions) and discard. Leaving stem ends intact, cut leeks in half lengthwise with the tip of a sharp knife. Place cut side down on prepared pan, drizzle with 2 tablespoons oil and sprinkle with salt and pepper. Roast, turning once, until soft and charred in spots, about 15 minutes. Transfer to a plate, cover tightly with plastic wrap, and set aside to soften.
  • Trim stem ends off eggplants and discard. Cut eggplants into bite-size pieces. In a large bowl, toss pieces with remaining 2 tablespoons oil, and salt and pepper to taste. Oil the baking pan again. (Use 2 if needed to prevent crowding.) Spread eggplant on pans and roast, turning pieces once or twice, until soft, browned and charred in spots, about 15 minutes total.
  • When eggplant is cool enough to handle, transfer to a serving bowl. Cut leeks crosswise into 1-inch pieces, discarding stem ends, and add to eggplant. Lightly chop cilantro and add.
  • Stir dressing and pour half over the salad, tossing gently until evenly coated. Taste and add more dressing, salt and pepper as needed. Garnish with cilantro sprigs and chopped peanuts, if using.

Time 1h40m

Yield 6 servings

Number Of Ingredients 19

2 teaspoons cumin seeds
1/4 cup extra-virgin olive oil
2 1/2 tablespoons apple cider vinegar
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 large shallot, finely chopped (about 1/2 cup)
One 14.5-ounce can vegetable broth (about 2 cups)
1 1/4 cups whole-grain quinoa, preferably organic
Nonstick vegetable oil spray
One 1 1/4-pound eggplant, unpeeled, cut into 1/2-inch cubes
3 tablespoons extra-virgin olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large Honey Crisp or Golden Delicious apple, unpeeled, cored, quartered
3/4 cup walnut pieces, toasted, or 1/3 cup roasted salted sunflower seeds
1/2 cup dried cranberries
1 large bunch watercress

Steps:

  • For the vinaigrette: Toast the seeds over medium heat in a heavy medium skillet, stirring occasionally, until the seeds darken in color and become fragrant, 3 1/2 to 4 minutes. Place the seeds on a plate; cool for 1 minute. Grind the seeds finely in a small food mill or grinder.
  • Whisk the oil, vinegar, salt, pepper, cinnamon, cloves and the toasted seeds until thick and blended in a small bowl. Stir in the shallots. Set the vinaigrette aside.
  • For the salad: Place an oven rack in the center of the oven and preheat to 400 degrees F.
  • Bring the broth to a simmer over medium-high heat in a heavy medium saucepan. Mix in the quinoa. Reduce the heat to medium-low. Cover and simmer until the water is absorbed and the quinoa is tender, about 15 minutes. Turn off the heat and let the quinoa stand, covered, 5 to 10 minutes. Cool and fluff with a fork.
  • Meanwhile, spray a large rimmed baking sheet with vegetable oil spray. Toss the eggplant with 3 tablespoons oil, 1/4 teaspoon salt, and the pepper on the sheet. Roast until tender and browned, stirring once, about 30 minutes.
  • Transfer the quinoa to a large bowl; fluff with a fork. Add the vinaigrette, eggplant, apples, walnuts and cranberries. Toss to blend.
  • Cover the bottom of a shallow platter with the watercress. Spoon the salad on top and serve.

ROASTED EGGPLANT SALAD

Categories     Salad     Tomato     Vegetable     Side     Broil

Yield 4 servings

Number Of Ingredients 7

1 ½ tablespoons Asian fish sauce
4 teaspoons sugar
2 teaspoons fresh lime juice
½ pound Thai eggplant (size & shape of golf balls)
½ teaspoon olive oil
2 medium tomatoes, peeled
2 tablespoons chopped cilantro

Steps:

  • In a medium bowl, stir together fish sauce, sugar and lime juice. Let stand, stirring occasionally, until sugar dissolves, about 10 minutes. Preheat broiler. Wash and quarter eggplants, removing stem and cap in process. Lightly oil a broiling pan, put eggplant pieces in and spray with olive oil spray. Broil 3 to 4 inches from heat, turning eggplant once, until tender and browned, about 8 minutes total. Add eggplant to fish sauce mixture, and toss to coat. Cut tomatoes into 1 inch wedges, add to eggplant mixture. Add cilantro and toss well to incorporate. Serve warm and succulent.

Tips:

  • Choose the right eggplant: Look for small to medium-sized eggplants that are firm and have smooth, shiny skin. Avoid eggplants that are bruised or have blemishes.
  • Roast the eggplant properly: To ensure the eggplant is cooked evenly, cut it into uniform-sized cubes and toss them with olive oil, salt, and pepper before roasting. Roast the eggplant at a high temperature (450°F) for about 20-25 minutes, or until the eggplant is tender and slightly charred.
  • Let the eggplant cool: Before adding the eggplant to the salad, let it cool slightly so that it's easier to handle.
  • Use fresh herbs: Fresh herbs like parsley, cilantro, and basil add a lot of flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount.
  • Don't overdress the salad: A little bit of dressing goes a long way. Add the dressing to the salad just before serving and toss to coat. You can always add more dressing if needed.

Conclusion:

Roasted eggplant salad is a delicious and versatile dish that can be enjoyed as a side dish, main course, or even as a dip. It's packed with flavor and nutrients, and it's a great way to use up leftover eggplant. With its smoky flavor and creamy texture, roasted eggplant salad is sure to be a hit at your next gathering. So next time you're looking for a healthy and tasty dish, give roasted eggplant salad a try. You won't be disappointed!
