1 medium head garlic
1 tsp olive oil
1 (2 1/2 lb) head cauliflower, (cut from core, cut into florets)
1/3 cup finely shredded parmesan cheese
2 Tbsp butter
2 Tbsp plain Greek yogurt or sour cream
1 tsp finely minced fresh thyme
Salt and freshly ground black pepper
Minced fresh parsley, (for garnish (optional))

Steps:

  • Preheat oven to 400 degrees.
  • Cut top 1/2-inch of garlic head to expose cloves. Lay garlic on a sheet of foil, drizzle with olive oil and wrap to enclose.
  • Roast garlic in preheated oven until cloves have softened and are just lightly golden brown, about 40 - 45 minutes.
  • Bring about 1/2-inch of water to a boil in a large pot. Place a steamer basic in pot then place cauliflower on basket and steam until very tender, about 10 - 13 minutes.
  • Remove garlic from skin (just squeeze each one upward to remove), place in a large food processor. Add cauliflower, parmesan, butter, Greek yogurt, thyme and season with salt and pepper to taste.
  • Cover food processor with lid and remove center insert of lid (since you're working with a hot mixture). Process mixture until smooth, about 1 minute, while scraping down sides as needed.
  • Serve warm with parsley if desired.

1/4 cup olive oil
6 garlic cloves, minced
2 teaspoons Greek seasoning
1 cup shredded sharp cheddar cheese

2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower, separated into florets
⅓ cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.
  • Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste.

1 large head cauliflower, trimmed, cut into florets
1 medium potato,peeled, cut into cubes
2 tbsp. olive oil, divided
1 garlic bulb
2 tbsp. butter, softened
1/2 cup milk, warmed
Shredded Parmesan (optional)

Steps:

  • 1. Preheat oven to 375°F. In a large bowl combine cauliflower and potato. Drizzle with 1 tablespoon of the oil, and season with salt and pepper to taste; toss to combine. Place on a rimmed baking sheet; set aside. 2. Cut the top of the garlic bulb to expose the cloves. Place garlic, cut side up, on a sheet of foil, drizzle with remaining oil. Bring sides of foil together to enclose garlic; crimp to seal. 3. Place garlic and baking sheet with potatoes in oven. Roast 20 minutes or until softened. Let cool slightly. 4. Cut or squeeze garlic from peel and place in a blender; discard peel. Add two-thirds of the cauliflower mixture to blender; pulse several seconds. In a large bowl coarsely mash remaining cauliflower mixture with a fork. Add blended cauliflower to bowl; stir to combine. Add butter and milk; stir to combine. Season with salt and pepper to taste. 1/4 cup 1% low-fat milk, as required
